Here's another topic I just copy and pasted from my own web site... this is important so read it... that's an order!

Appetite fatigue.... bet you never heard of that before... well it is real it does happen and it can kill if your not paying attention... Mostly Appetite fatigue effects the very young or elderly... what is it??? simple... Picture yourself eating beans and only beans for a 30 days... be pretty sick of beans right??? might also get scurvy too... that's when Appetite fatigue sets in... more and more you get to hate the idea of more beans and pretty soon you lose your appetite all together... the result is your body would rather starve than eat another damn bean! the fix is simple, a varied diet.... but sure enough lots of folks packing goods away, for that, just in case, tend to pack two three or four items and nothing else... not a good plan people... maybe you can live a year or longer on lentils but will a toddler??? Will Grandpa???? Will you for that matter....

take a look at this handy article... there's a lot more on the site too so be sure to visit and take notes

    From Backwoods On food Storage

Most people don’t have enough variety in their storage. 95% of the people I’ve worked with have only stored four basic items: wheat, milk, honey, and salt. Statistics show most of us won’t survive on such a diet for several reasons. a) Many people are allergic to wheat and may not be aware of it until they are eating it meal after meal. b) Wheat is too harsh for young children. They can tolerate it in small amounts but not as their main staple. c) We get tired of eating the same foods over and over and many times prefer to not eat, then to sample that particular food again. This is called appetite fatigue. Young children and older people are particularly susceptible to it. Store less wheat than is generally suggested and put the difference into a variety of other grains, particularly ones your family likes to eat. Also store a variety of beans, as this will add color, texture, and flavor. Variety is the key to a successful storage program. It is essential that you store flavorings such as tomato, bouillon, cheese, and onion.

Also, include a good supply of the spices you like to cook with. These flavorings and spices allow you to do many creative things with your grains and beans. Without them you are severely limited. One of the best suggestions I can give you is buy a good food storage cookbook, go through it, and see what your family would really eat. Notice the ingredients as you do it. This will help you more than anything else to know what items to store.

Edit to add... I guess for those who've never been there... again, here's the link to Grandpas Survival Shack https://sites.google.com/site/grandpassurvivalshack/home

    How old is that spice?

Having spices for cooking is more than just a good idea. As noted in the post, spices are key to making food palatable.

    This site
How long should I keep spices? | Yahoo! Green
has some good ways to see of your spices are 'too old'.

McCormick - a major seller of spices, suggestions TOSS - in essence tossing all spices over a year old. YMMV.

I would suggest marking the purchase date on any spices (or any food for that matter) that so not have a best if used by date as part of the OEM package.

    Have fun.

Interesting. One could lose weight that way. (Living, breathing proof sitting right here. I can't cook very creatively, down 10 lbs since I retired.)

Personally I love beans... but the Marine Corps did unholy things to pork-chops... twenty years of that and I cant even look at one... Those and the old ham and eggs that came out of the C Rats boxes...I guess they just had to go and prove Marines will eat things that make a billy-goat puke

Tabasco ! Did wonders for everything on the C-Rats menu (except of course, ham and muthas). I lived mostly on C-Rats in Viet Nam, and as Grandpa pointed out, about lost interest in eating... I opened a can of meat (Chicken, Boned; Pork Slices In Juices; Ham Slices) and one of fruit every day more because I knew I needed the fuel than out of hunger. A B-1 Unit, Cheese, Cheddar, one each disc, and a dash of Tabasco made things vaguely interesting, but I still came home at 179, vice the 215 I left home weighing.

Remembering the cheese, I bought a case of Bega canned cheese, and a case of Red Feather canned butter to supplement the basic stuff... both items allege to have an almost infinite shelf life if stored out of the sun. Both taste good, although the Bega is pretty hard, compared to Velveeta.

That's a good posting, Grandpa Dave! When I was young I used to wonder when I'd hear about old folks being malnourished because they couldn't be bothered cooking for themselves - I couldn't imagine being in such a situation that I would not want beautiful wonderful FOOD, lol. However, here I am.....no appetite, or very little, and lazy, lazy, lazy....cooking holds no appeal any more, have to force myself on to my feet and up to the stove, mainly because the other people in the house need to eat. But I do have to say that we LOVE BEANS in our house...they are our really best comfort food. Also love a fish fry-up (saltwater fish in my case, can't stand freshwater fish, it just doesn't taste right to a person raised on the salt water stuff right out of the sea that morning. Oh happy days!) Oh, I forgot about freshwater smelts...we used to get bushel baskets full and have smelt-fry-ups, gosh they were SO good....I never hear of anybody having them any more, they're not even for sale in the stores and the rivers up here used to be thick with them. Another species gone?

So I am reading your post and giving myself a lecture....I really must try harder. I have every cookbook known to man/woman/person so there is no excuse. I plan to put together a raft of recipes that everyone will eat ( now, there's a challenge!) and buy in/store all the ingredients for those recipes. Bit of an exercise for sure, since my son is vegetarian, I am "almost" vegetarian and the two boys (who are grown men but from my standpoint, they are boys) who are total carnivores. Should be fun.

    I love beans,especially pintos,and can eat'em 3 meals a day..but they'd get boring after a while.And you really need smoked meat to bring out the taste.So I don't store just beans,nor do I grow just beans.

Rereading this thread brings up an old memory that I'd about forgotten..in the 50s my mother and I lived with my grandmother. We got down once where we had batter bread and homemade blackberry jelly..only..for about a month.3 times a day.I never got so sick of anything in my life. Now,though,I'd give just about anything for a jar of grandma's blackberry jelly. ETA..batter bread, for the uninitiated,is flour and water stirred together and baked.

I had a few "brownies" that started getting fermented in some of my C-Rats. Wowsers, get a buzz from smelling them. Of course the C-rats were Civil War surplus, along with the S.O.S. that was served on a near daily basis. I seriously believe there is some strange sadistic bent in military cooks. The mil goes out of their way looking for people who don't have taste buds or a sense of smell to groom them as kitchen monkeys. I swear.

ditch witch I do stupid crap, so you don't have to

They should have recruited my mom. If it ain't burnt it ain't cooked in her book, and forget about salt, seasoning, or anything else worth eating. I threw a piece of her chicken to the cat once, and he tried to bury it.

OTOH, I was always skinny when I had to eat at home...
