Honey cakes for a massive burst of energy

    with a twist.

    Originally got the idea from Pipemaker, but have modified it to better suit us.

    The main thing to know is the proportions. 3 dry to 2 honey. The original recipe called for 2 cups flour, 1 cup corn meal and 2 cups of honey. Put em in muffin tins and bake for 15-20 minutes at 350.

    I have been using corn flour and also adding chia. Today, I used what we had and I think it will give both a quick boost as well as a long energy burn. Couldn't find our corn flour so used gluten free flour (used all we had...1 1/2 cups). Our corn meal was all gone, so I made my own by grinding dried sweet corn (1 1/2 or so cups). Added a couple of scoops of chia. The trick with the honey is to gently warm it before mixing. Warm, not hot.

    After camping, I had a big campfire breakfast, a canteen cup of coffee and two honey cakes. Went straight to a morning martial arts workout that is pretty strenuous and that went for five hours straight. I was good to go.

    By the time I was done at around 3 in the afternoon, I was hungry. But not overly tired.

    I usually have about 8 cups of tea with honey, so I think I can relate! lol

    Plan to get plenty of honey to see us through the winter. Might try this, but without corn(allergic).

    Holy cow! To think, in America of all places and be allergic to corn. Well, if that carries over to high fructose corn syrup, you've just made 95% of every product made unavailable. I imagine you have an allergy to a GMO derivative or I am way wrong...

    Not sure if it's GMO corn or not. But popcorn is off limits to me. I eat a bag of that, I wake up next morning with a cold. Can't have raw tomatoes either. Processed/canned tomato products are okay though. Can't drink milk either. Just the liquid stuff. Butter, cheese, ice cream, no trouble, but I get bad stomach pains from liquid milk. Even powdered milk does it to me.

    The milk problem could be more of a bacteria/digestive issue. Eating good yogurt regularly can help reset your system so you can enjoy dairy. Most lactose intolerance is really a poorly balanced system. But as for allergies, yeah...serious stuff and way out of my area of expertise. As long as the reactions you get aren't respiratory related or cause dizziness and swelling, it's not technically an allergy I would worry about, but it's always good to get a professional opinion. Yeah, popcorn makes me sick, too. Maybe it's the butter garbage, so I never touch it.

    My wife has us mostly gluten free. I used gluten free flour this time.
