Like most people who store food, I store pasta. All sorts of shapes, flavors and types. How do I flavor/ prepare it? Currently I open a jar of sauce, brown sausage and call it dinner. Or open a jar of Alfredo sauce- it really is gross but different. I am looking for simple quick suggestions on pasta dishes. I want to use cupboard basics or things that store easily. Any suggestions would be appreciated. I am not a real creative cook but I have vegies, meats and basic spices.

All pasta recipes would be appreciated.

Okay- let's pretend you only have a box of shells. Walk to your cupboard. What in there would be good for making them taste good.

A really good sauce can make almost any pasta dish taste good :D

    • pasta Any Type
    • kick $$$ sauce
    • healthy oil (Italians use olive oil as you can see in the recipes)
    • optionally pile your favorite vegetables and fruits on top
    • optionally add your favorite cheese or cheeses
    • protein source (optional) plant or animal based

    Enjoy!

    :)

small curd cottage cheese is the inexpensive substitute for ricotta. Try substituting ricotta with 1/2 small curd cottage cheese and 1/2 fresh grated parmesan or 1/2 multi cheese Italian 4 to 6 cheese grated blends. Then without lying tell them there is NO RICOTTA cheese in this. See if that passes the taste test.
    .
One more thing, make this with no prying eyes, so they will not preconceive the, "that looks like ricotta, so I won't like it syndrome."

One other note on "I don't like that" syndrome when it comes to fixing supper for the family. Choosy eaters don't get a pass at my table unless the have a true allergy to something. 2 solutions; well tomorrow you can cook supper for the family. and my favorite; reach in the pantry and pulled out either the peanut butter and a loaf of bread and tell them that's their option tonight (or a can of Campbell's condensed soup) and tell them to help themselves to fixing it.

My favorite is a lunch special at Justines, in New Orleans from their old Chef Elpho. We just called it "Elpho's Special" and still do even though Elpho has been dead a while and I do not know if Justines is still in business or not, since I haven't eaten there in maybe 30 years, Justine is dead too, but I still cook Elpho's Special at least several times a year because it is a favorite.
Saute a cup of chopped green onions in two sticks of pure salted butter, do not use margarine but if you can reduce the amount if you add a bit of olive oil to it. Add two cups sliced mushrooms (I prefer shitake but buttons work really well too). Add two lbs. peeled and deviened small shrimps (36 count or smaller) and cook for just until the shrimps turn pink. Add more salt and fresh ground black pepper than you think it needs because shrimps need a lot of salt and well, you just can't use too much black pepper on anything except ice-cream and that is still debatable. Add this mixture to cooked and drained Angel-hair pasta and cover liberally with fresh grated Parmesan cheese, not the boxed kind and serve with a crusty bread and a salad of greens, green onions, and a bit of tender sauteed asparagus with an oil and vinegar dressing. Wine selection is deferred to Justine's quote "what kinda wine has you got"?

Sounds like a cajun version of scampi, just needs a bit of garlic.

not shrimps! Garlic overpowers the tiny shrimps and scampi isn't served as a pasta dish.

I cook for my folks and freeze the makings for meals. I will cook up a big pot of sauce, add sausage and meatballs. Then separate the meat ball, the sausage, and two portions of sauce w/o meat. Then i put them into separate freezer bag. One bag is for pasta and and sausage. One bag is for meatball subs. Then i will cut up chicken breast with the bone and bake it with sauce and then freeze it. The last bag of sauce my folks will use to make chicken Parmesan using precooked breaded chicken breast. So one pot of sauce will make four to five meals. This way they can make dinner for themselves quickly and easily.

Tac - I like the way you think. Now that my kids are old enough to skip a meal without killing them the rule is "complain about dinner and it is removed from your place and you go to bed...now...immediately" Do not pass go, nothing different, they are just done. They can (politely) say they don't like it after they have finished it but the little gagging sounds or the faces and scrunched noses and sour expressions have gone the way of the dodo.
