Recipe fried taters

    1 kielbasa or smoked sausage
    2 small or 1 med sized onion
    i-da-ho or red taters
    cheese (i like american or mild cheddar .. )

    in a large skillet (cast iron works best but non stick is less mess)
    slice sausage in 1/4" -1/2" disks like pepperoni
    dice onion
    under a med/med low heat start simmering onions and sausage ..
    dice up taters how you like them get them added into the skillet
    cover to help cook down the potatoes .. turning ever so often to prevent burning
    dash of salt ... pepper to your liking ...

    after taters are cooked and started browning add cheese on top
    use the broiler in the oven to melt down the cheese into taters ... and serve

    option (breakfast)
    when taters are browning just before adding cheese fold in 2-4 eggs till eggs are cooked in
    then add cheese and use the broiler to melt the cheese into the taters ..

    i use this as a meal in itself .. and have to make 2 skillets of them at the same time just to have left overs to take for lunch... if you make them with eggs .. do not plan on keeping them very long .. taters.

    Just read this recipe to the family. They were all nodding, thumbs up. I guess I need to get some smoked sausage. Also, my husband is from Oregon so Tillmook cheese is a staple in our house.

    I do something similar adding peppers to the mix. Have never melted the cheese in the broiler though. Most often I use shredded mexi blend and melt it on the stovetop.

    i use the broiler to melt the cheese faster .... just me ... i used to wait for the heat of the taters to melt the cheese .. using the lid to trap the heat ..

    I'm always a little conflicted on this...

    Went to college at Wisconsin and became a partisan of Wiscy cheese after all those stops at the factories for warm cheese curd and the girlfriend from Colby...then years later I retire to Oregon and there is Tillamook....

    As far as we are concerned we feel cheese is a lot like bacon:

    1) Is its own food group

    2) Should be included/part of every meal/dish

    3) There is no such thing as "too much" as far as cheese is concerned

    4) Cheese is yet one more sign from the Almightly that he loves us and wants us to be happy...
