Honey Cakes

    Been making these for years. First heard about them from a fellow bush crafting hoodlum named pipefitter. But since my wife tried to avoid wheat, I changed it up. And when my wife started taking chia, a la the Tarahumaru, I changed it up again. Anyway, it is really simple. And the end result honey cakes can be stored unrefrigerated and last for months. I think pipefitter mentioned that he stored his in a bag for six months. Ours have never lasted that long. A couple months tops. The cool part is the energy boost.

    Since my wife has a long trail race tomorrow, I decided to make a fresh batch for her. I know. She is ONLY doing 30 miles on a hilly trail. I mean, why even pack water for something that short, right? :whistle:

    But she has taken these honey cakes before as have I, to great effect. So without further ado...

    Dry stuff with the honey poured on

    First time using these cupcake paper cups. Awesome! Wish I always did it this way.

    Perfectly golden brown, no stick, no fuss, no muss, perfect consistency, and tastes good. I find a couple honey cakes after a good meal with a load of coffee if fantastic. Fueled a tired, right after camping me, through a grueling four hour martial arts workout.

    I noticed the chia seeds always seem to "float" to the top. It passed the main test!

    It has been so hot and humid and today was no exception. Wifee suggested not making it since it involved baking. But her run is tomorrow, so I kinda gotta. So hot, sweaty and stinky now. Had to cool off with cold drinks.

    Quite simple, @kellory.

    I warm up about two cups of honey (not hot, just enough to make it more malleable)

    Add dry stuff to mixing bowl:
    about 2 cups of corn flour (can use white or whole wheat or whatever you want)
    about 3/4 to 4/5 cup flax meal (I normally use corn meal)
    about 1/5 to 1/4 cup chia seeds

    That's it for the dry stuff. You can make it how you like.

    Pour in the honey and mix

    Pour into a baking sheet with the little holes (I added the cupcake paper cups for the first time and will do so every time from now on.)
    Lube it up (used Pam and butter in the past. Not together) Used coconut oil today

    Bake at 350 for 15-20 minutes (I did 18 today)

    That's it. Because honey doesn't spoil and the dry stuff lasts long time, the honey cakes will last indefinitely without refrigeration. Pop one or two when you need it. Pack a couple on the trail. Good stuff. I like eating it best while drinking coffee. Tastes good and the honey and caffeine combo is really good and long lasting. Like 5 hour energy.

    Hanzo, I just stole your recipe and moved just the recipe to Back to Basics, "recipes". I did so so it would not be lost to us easily.

    Energy snacks and honey cake worked well for her. Will check with her mother after she gets home from the 30 mile trail race.

    What a great and "interesting" game we had. We faced a bigger team and had no subs because a couple of our girls were out. The referee team that officiated the game... well, let's just say I wonder how they got certified... It was a tale of two halves.

    First half, the "referee" called every ball that went out on the other team's goal line a goal kick, even though most of the time, they kicked it out. That took away a bunch of our opportunities. He even tried to call a goal kick for that team while the ball was still in play. Whoa! The assistant referee on that side of the field lined up with our forward instead of the last defender and called offsides when she got the ball even though two defenders were behind her. The other team used their size to body check our girls all game. Little monkey was attacking the goal and was stopped by a cross body block that took her to the ground. At least we got a penalty kick on that one. And what took the cake was one of our girls was taken out in the second quarter with a high kick to the face by one of the other team's biggest players. She got bloodied up good, was a little shaken up and had to come out. So we finished the half short a player, but kept our 1-0 lead.

    Second half, the other AR was also inexperienced, but an experienced referee was helping him out, so the second half calls were more proper. The ref still tried to call goal kick when the other team kicked it out, but the AR held his corner kick signals. So now that we had our rightful opportunities, we dominated. Finished the game 6-0 and five different girls scored, including the little monkey. And half our goals were assisted, so great team work all around.

    Anyway, sorry so long winded. I have just never seen a game refereed like that before by an impartial referee team. I am a certified referee and don't know how these guys got certified. WOW! Anyway, have a great weekend everyone!

    My young daughter had to have her knee rebuilt due to a soccor player driving her knee backwards. She will never play soccor again, but moves all right now.
    For a while, everything hurt. And we didn't know if she would ever walk right. It could have been much worse.
    She is now an EMT for a beach Patrol.in a year, she starts training for becoming ba paramedic.
    Fearless as your monkeys appear, remind them they are not indestructible, please?

    Sorry to hear about your daughter soccer injury, @kellory. But am proud of her for her accomplishments as I am sure you are. Yeah, I had my knee taken out when I was young too and it is never the same. I do tell my girls to be careful. But sometimes, the most safe way to play is playing hard, but with attention.

    Coffee jelly in milk for wifee and me. For wifee because she accomplished something in finishing her first 30 mile trail race, in some fairly steep mountain terrain. More than most people can say they have done.

    She had some honey cakes during and after and says she feels pretty good. No cramps. Only ache is her knees from running down this really steep and long path.

    For me, because I got up at 0 dark 30 when she did. And coached a game in blazing heat and humidity. Being on the sidelines in that gotta be at least as hard as a 30 mile trail race. :whistle:

    I like to eat honey cakes during my college days. Recently I learned how to make honey cake while watching some youtube videos. You post is awesome. I like it very much; I also likes to taste your honey cakes.
