Chocolate Chip Sea Salt Bannock

    I could have sworn I posted this recipe before, but I couldn't find it. So since I was texting it to @Bear, thought I would stick it on here. Just remember that the portions are hanzo style (not measured).

    Dry stuff:

    Flour (I'm guessing 2-3 cups, just eyeball to figure out how big a bannock you want to make)
    Semi-sweet chocolate chips (about three big handfuls, or what I tell the monkeys is way too much)
    Baking powder (1-2 teaspoons)
    Sea salt (1/2 - 2/3 teaspoons)

    Mix the dry stuff

    The butter and salt are optional, but we like it this way.

    I melt butter (1-2 tbsp, or whatever you feel like. It varies when I make it.) and add a little water to it to cool it down.
    Pour liquid onto the dry stuff and mix
    Add water a little at and time and mix until it looks something like this.

    Add dry flour to your hand(s) that is going to be boring the bannock mix as well as sprinkle some dry flour onto the wet dough and bowl. Flop it around until you can handle it without it sticking to you. Looks like this.

    Heat up a pan on medium and melt some butter in it and spread it around.

    Put the dough in the middle and press it with your hand(s) that has flour on it. Flatten and spread it out. Looks like this, but bigger. Made a small one tonight because we ran out of chocolate chips, so I dumps the bag (about two handfuls) in and had put let flour at the start.

    About six minutes a side, depending on your stove. But try that and see. You know the toothpick test right?

    Again, optional, put I pour some more melted butter on top. Spread it, and sprinkle a little bit of sea salt on it.

    That butter will also make that side brown really nicely. Here's the first flip.

    I spread a little more butter on and sprinkle a little more sea salt on this side. After six minutes, I flip it again for just a very short while, like a minute to brown the butter. If you didn't add butter, you would be done before the flip.

    This is what the nicely brown buttered side looks like.

    You can tear it. Some people say it is bad luck to cut bannock. I say phooey, since cut bannock is called a scone. You can cut it with a knife, but a pizza cutter is easy.

    I have made scones and they were not this easy. But it bannock is like a scone then this recipe can be altered in many ways. @Hanzo have you every added blueberries or spices etc... or do you just stick with the version your monkeys like?

    @Hanzo this made me smile. 'eyeball drystuff.... mix wet stuff.... add butter' those 3 phrases make you a master chef ;)

    I have added fruits and nuts before with brown sugar. Very good too. But usually stick to what the monkeys like. You can make it however you like. Like adding bacon and cheese. I like that one.

    Oh, also used the batter (without chocolate chips) to make little dumplings to pop in soup. Just spoon it out and drop it in. They get much bigger when they absorb the broth.

    A scone is just bannock cut into a wedge.


    Hehehe... how easily fooled. I am the master of nothing. Well, except maybe eating. I have my black belt in eating too much food. But so sweet of you to say.

    I cannot wait to try this. I think it would be good with dates and cranraisins etc... I like the simplicity.

    I make bannock because my monkeys love bannock. Pretty simple. So on a wet, cold and blustery morning, we had the usual chocolate chip sea salt bannock. I might have put more chocolate chips than normal today.

    Be fine if you got rid of the baking powder too.

    But honestly, you can always sub out flour. For my wife's honey cakes, she tries to minimize her gluten intake, so I sub the wheat flour with corn flour, corn or flax meal and chia seeds. Comes out great.

    Hanzo, I surprised Sweetie tonight with this. I explained who I got it from and how. She took a couple of bites and LOVED it! I had to try 2 pieces myself just to make sure it was really as good as I thought it was. YES! Many thanks.

    A couple or 4 notes. 1) you didn't say how much butter to use. I put in 1/4 cup, microwaved it till melted, added some cool water and proceeded. 2) It seemed like the dough could use some fat, so I added the butter/water mix to the flour as well as 1.5 tsp kosher salt, enough water to give a good consistency, let it rest for 10 minutes. Didn't pour melted butter over end product or sprinkle with salt since it already had both 3) cooking in an iron skillet with minimal oil worked great...kept it from sticking. 4) NOTE: Make the bannock disk SMALLER than the skillet! (I used 3 Cups flour and made 2 discs, should have made 3 smaller discs) That way it's not difficult to turn over and get out when done. :LOL: Cooking time was about what you said and the results look like the pics you posted of the finished bannock.

    Anywho, a winner!
