No cook cooking - Ground Bologna Sandwich Spread

    Ingredients
    1-1/2 lbs bologna I like German style, pick your own.
    2 - 3 Baby sweet pickles
    3 good sized slices from 1 medium-size onion - then chopped
    1 cup mayonnaise
    2 tsp prepared yellow mustard (added to your taste)
    Kosher salt
    1 loaf white bread

    Equipment
    Hand-cranked meat grinder (the original food processor)
    1 large glass dish
    1 large mixing bowl
    1 2-quart storage container with lid

    Remove any strings from bologna. Cut the bologna into 4 sections for easier handling. Remove the casing.

    Install disc onto the front of the meat grinder for smallest grind.
    Grind the bologna into the glass dish. I run the pickles thru with the chunks of bologna.
    Remove front of grinder and push remaining bologna into the mixing bowl.

    Finely-chop the slices of onion. Add the chopped onion to the bologna in the mixing bowl, then add the mayonnaise and mustard to taste. I've added ground dill slices tot he grinder from time to time to change the flavor.
    Mix until smooth. Taste it, adding any salt - if necessary.

    Transfer the finished spread to the storage container.
    Refrigerate. Use a spoon to put a layer of spread about 3/8" thick on a slice of white bread, then close with another slice. Serve with classic sides - chips, corn chips, etc.

    I grabbed this from the web to show it is possible to add all manner of 'extras' to the sandwich.
    I grew up watching my mom make this for our large family. Low cost, easy and fast to fix, and nutrition wise, not bad for you....

    In my family we call the the above "Minced Ham & Pickles" and I just made up a batch, to eat tomorrow for lunch.... We are expecting 2" of snow, overnight, and this delight, goes with Hot Cocco, along with the first Snow...

    I'll trade your two inches for my 10. Lake effect doesn't happen often here, but it did this week.
    We did the minced ham and pickle thing, too, but we used leftovers from boiled ham when there was any left over. Grind up a few olives with the ham for a tad of flavor if you like.

    At least you aren't getting your ration of mercury like with tuna salad....
