    Many Monkeys have gone Primal and are doing some variation of the Paleo lifestyle, so I thought we should have a thread featuring our own recipes and Paleo tweeks.

    PLEASE DON'T CUT AND PASTE FROM THE INTERNET

    For me, I still do dairy because I can't live without a morning double shot latte and I love Sharp Cheddar Cheese, Monterey Jack, Colby, Blue, Goat, Gouda, you get the point. I'd love to find them all from grass fed sources, but that is not an option with the limited shopping choices I have here.

    I have begun to cut bread and wheat flour from the recipes I make and figured others who have gone Primal have done the same things.

    So, here it is. A thread dedicated to Primal/Paleo recipes....

    I like sandwiches, but have cut out the bread, so....

    Lettuce Wrapped sandwiches have taken breads place around my favorite foods.

    The BLT

    Pretty simple, really. Select a large vine ripened tomato, preferably from a farmer's market and organic. Peal off an Iceberg, Butter or Romaine lettuce leaf (same source if possible). Thick slice the tomato, then cut into wide juliennes slightly larger than the width of your index finger.

    Crisp up your favorite bacon and round up some Mayo. Best Foods adds sugar (go figure), but I want to try some home made Paleo Mayo. Smear some Mayo (about 1/2 Tbsp.) onto the lettuce leaf. If you are using Butter Lettuce you may want to reduce the amount of Mayo. Lay in three slices or more of bacon and four of the julienned tomato and gather the lettuce leaf around the treasure.

    On a plate with some sliced fresh fruit, Apples, Peaches, Nectarines, quartered Oranges, or wedges of Tangerines.

    I do Iced tea with a lemon twist for a beverage.

    And.... That's lunch!

    Uggg........club meat! Eat meat!! Poo!!!

    It's not a palio sandwich per se, but when I had to fast for a hideous medical procedure recently it started with carbs. I got to like a couple of slices of bologna, with a little mustard and mayo, wrapped around a low fat string cheese with lettuce wrapped around. Pretty tasty!
    Now I get that bologna is a highly processed food and has lots of rat hair and stuff! That hair in your food is right in Paleolithic mans wheelhouse!
    I'm fortunate to have a fine local butchers shop where the cold cuts are created to a very high standard. We've been going there for well over forty years, and we trust them implicitly!
    We also enjoy a nice, medium rare steak, sliced on the bias and served atop a chefs salad minus the other meats! We are like the OP and love cheese so the salad almost always has cheese and hard cooked egg.

    Roll up a slice of roast beef in a slice of Swiss cheese. Blueberries for dessert, with or without sugar and a splash of milk.

    Don't know about this paleo stuff but I live by the general rule "It is food if I can eat it before it eats me"

    Here's another lettuce wrap sammitch...

    Tuna Salad

    Mix a 5 oz. can of Albacore tuna with a One Tbsp. of Mayo
    Divide into two lettuce leaves
    Lay Mount Olive Bread and Butter Pickles (I know...sugar) the length of the tuna
    Wrap the lettuce leaf and plate with a wedge of lemon
    Serve with seedless grapes, fresh melon, or pink grapefruit

    That "Paleo" diet might be better named the Mid 1950's diet. I think I'll go hunt a burger at Steak N Shake, crispy fries, extra cheese, and a chocolate shake. Have to keep up my strength for pushing the gas pedal on my car as I wander across the landscape in my search for ever elusive game. Whoaaaa, better pull into DQ and see what I might snare on a game trail there, good hunting to the rest of you who are re-creating the diet of Stone Age people. What kind of cars did they drive? Must have missed that day at school.

    Need a samitch?..

    Cloud buns
    4 large eggs, separated
    4 Tablespoons cream cheese (& not the low fat crap )
    rounded 1/4 teaspoon cream of tartar.
    a couple drops of stevia (or you could use a small dab of honey.. you just wanna wee bit)

    oven 300 degrees.
    Couple stick proof trays & oil them (I use ghee )

    Separate yolks, standard rules apply (ie don't get yellow in the whites)
    add creamoftarter to the whites & beat them till they form stiff peaks.
    add stevia to the yolks plus any spices you would like for flavor (i like chives, garlic, paprika, chipole etc.. just dont add to much)
    Add the cream cheese & stevia to the yolks,
    give the yolks a good beating then gently fold the whites into the yolks.

    scoop onto trays, if you want burger buns/sandwiches then divide into 4 rounds on each tray (total 8) or wraps/hotdog buns make 2 rectangles on each tray (total 4) spread out a bit but don't flatten out to much. should be about 3/4-1" high

    into oven for aprox 30 minutes (probably closer to 25 if you have fan assist.) take out when golden brown (Black is bad...)
    Take out, let cool a few minutes then remove to a cooling rake.

    wait till fully cool to use if you want the "bread" feel (other-wards there a bit crumbly)
    Can store for up to about 3 days in sealed container

    3M-TA3 Cold Wet Monkey

    My go to salad. Filling and full of energy, so its great for lunch.

    Vinaigrette:
    • 4 - 5 tbsp red wine vinegar
    • 1 tbsp balsamic vinegar (optional)
    • salt
    • garlic
    • coarse ground pepper
    Other
    • 1 can of Tuna (you can also use chicken, shrimp, or other seafood)
    • Head lettuce (or other varieties) chopped the way you like
    • tomato - usually 3-4 of the smaller Costco hydroponic on the vine if garden tomatoes unavailable, sliced or chopped
    • chopped sweet onion
    • Optional: apple slices and/or sliced up orange wedges.
    Start by placing the tuna in your salad bowl and break it up into the size peices you want
    Combine the vinaigrette ingredients (use dry ingredients to taste). I usually do this in a small juice glass.
    Pour vinaigrette over tuna to marinade while you chop the salad vegetables
    Add vegetables, stir and enjoy

    If you are taking this to work do the prep ahead of time keeping the vinaigrette in its own small container and the tuna in the can.

    Primal Omelet.

    Preheat cast iron skillet while melting 1/2" hunk of real unsalted butter.
    Once butter is sizzling, break two eggs into pan and stir around to mix yolks into whites.
    I'm real fond of my bamboo spatula for this.
    Tilt pan occasionally to get eggs evenly spread, and cook until they can be flipped over in one piece.
    They should be just a little browned on the bottom after the flip.
    Remove from heat. This is cast iron cooking. The pan will finish the cooking without additional heating.
    Add a hand full of shredded cheese, chopped onions, and precooked sausage or bacon.
    I give this seven twists with the sea salt grinder and 16 with the coarse pepper grinder.
    Fold it over and press down with the spatula until cheese is melted and oozing out the sides.
    Slide onto a paper plate, or if you really stuffed it with extra stuff, lay the plate on top of the skillet and invert the whole thing to get the omelet safely onto the plate. Then scrape any stuck cheese and leftover butter onto the top.

    Wipe that precious cast iron skillet clean with a paper towel, wiping the remaining butter thinly all over the pan, including the handle, and hang it in a place of honor. No soap & water? Never. Maybe once a year I will have something that sticks and won't completely scrape off with the sharp bamboo spatula. A couple twists on the sea salt grinder and a little rub with the paper towel and it's all cleaned up. I might melt a speck of butter on the pan and rub it over the cleaned area, but it usually doesn't harm the gloss black glass smooth seasoning. (my pans are all older than I am.)

    This has been my breakfast for more than 2 years and sometimes my dinner. I have added other stuff,
    from olives and hot peppers to salsa and mushrooms, but the basic omelet remains the same.
    Simple, delicious, and with nothing containing an ingredient that I can't pronounce.

    I could never do Paleo, since I still use a big shot of heavy whipping cream in my coffee. No artificial sweeteners or fake spackling paste powdered creamers. Almost everything I eat has one to two ingredients. I read some labels, and will never touch a long list of things I used to consume regularly... 60 pounds and 5 prescription drugs ago.

    The key to paleo is the 80% rule... If you can follow it 80% of the time, you're good to go

    Primal.... Paleo + Dairy. (same rules apply otherwards.. ie chemically infused dairy fake food does not get the green light)

    Most of the reason Primal dosent allow dairy is that so many people are actully alergic or intolerant when tested.. estimated 50% of the population...

    The paloe rub makes for an authentic Texas Brisket, but the Sugar Free Finishing Sauce makes or breaks the deal. JMHO.

    Sugar isn't the only sweetener on the shelf. There are pure maple syrup, Stevia, and sucralose, Agave, coconut sugar and just plain fresh squeezed citrus like blood orange, grapefruit, naval orange and pink grapefruit. :D

    Reducing the juice increases the sweetness...

    A BBQ sauce made from a reduction of fresh squeezed orange juice is quite good. At least, mine was.

    Cheese cake
    12 zo cream cheese
    2 T sour cream or greek yogurt (room temp)
    2T lemon juice
    1t lemon zest
    3/4 cup powdered Erythritol
    1/2 C whipping cream
    1T gelatin (or one envelope if your using knox individual portions)

    CRUST
    1.5 C almond flour
    1/4 C Erythritol
    1/4 C Butter

    Melt the butter and stir it into the almond flour and erythritol, press into a pie dish


    Beat together all the ingredients except the gelatin and whip cream. HINT: if you add the erythritol last it mixes better.

    in small bowl whisk 2 T of heavy cream and gelatin then fodl itinto the cream cheese mixture

    Use the rest of the heavy cream in another bowl until it holds stiff peaks, then fold whipped crem into cream cheas mixture,

    pour into the crust and refrigerate makes 10 serviings

    This is the cheapest i have found erythritol so far, its a bit grainy in texture so i run it thru the coffee grinder to make powdered sugar which gives a smoother texture
