I never make it as far as the fruit... BTW Gallo makes a very nice very consistent brandy at a decent price.
That's the one. I usually add a little peach schnapps. Good enough for drinking, cheap enough for cooking.
I like the concept of brandied fruit. However, maybe sometime I'll relate a story of a night drinking too much Martell's on someone else's tab. Makes me really reluctant to try that recipe.
I had Christmas dinner with a friend, Margie Bynum, the Dispatcher for GMO Railroad, where I worked when I was younger and she served brandied fruit over home-made ice cream. She served it from a stone crock, much like one that I use and told me that her great grand mother had started that particular batch in 1860 or there abouts. She gave me some starter to begin my own batch but unfortunately, it got eaten by a horde of visiting relatives and I had to start over. This batch should be just about perfect by Thanks Giving and you just add bit more fruit, a bit more brown sugar, and a bit more brandy, as needed and it never goes bad.

Made it in August, put in pantry and forgot about it. Pulled out today and, wow, pretty strong. Trying to figure what to eat it with besides the 3 thing mentioned above, suggestions are welcome.
Why do you think I've been MIA for so long?? This stuff is great!! May sound weird, but I'm liking it over homemade vanilla ice cream.. Was a big hit with the non Baptist members of the family
@Mountainman when its too strong and too alcoholy smelling, just heat it a bit kill off some fo the fermenation and put it over a plain biscuit and or pancakes. The plainer the base the more it offsets the strong compote. also sometimes if you add lemon or lime juice that can help 'brighten the flavor' i know it sounds weird but just try it. it depends on how strong the compote is, sometimes just add more alcohol =) YOu have to experiment a bit
