Found a Pinto Bean Seasoning mix I really like. Works for Red Beans as well.

    2 t Kosher Salt
    1 T Cumin
    1/2 T Chili Powder
    1/2 T Garlic Powder
    1/2 T Onion Powder
    1/2 T Paprika
    1/2 t Sugar

This is for one pound of dried beans. I add two tablespoons of dehydrated onion flakes and one tablespoon of fat, whatever you have. The beans are not salty and have a mild cumin flavor. Swapping the measurements for chili powder and cumin would give a more chili bean flavor if that is what you prefer. I have been using Fiesta Brand Pinto Bean Seasoning which I really like but it is no longer carried by Wal-Mart and won't be available at all post SHTF.

    1 /2 t garlic powder
    1/2 t paprika
    4 oz coconut milk
lemon or lime juice on slice to make the flavor pop

use as a dip for veggies or chips

Makes a great sauce for meat as well (even spam )

    2. you can use any green, i just like cilantro
    3. i use this for most chopping mixing etc. its cheap and easy and just the right size for one or 2 ppl and most sauces

On making Mayo, in many parts of the country one can't get olive oil. A lot of it is counterfeit or rancid. A simple test is try a spoonful of oil on its own. If that is unpalatable use a different oil. Walnut oil works well, as does avocado and grapeseed. I also think it binds a little easier with an extra yolk

Nice! post @SoaySheep I've tried mayo with coconut oil.... not so good in the taste department, the oil (whatever youuse) needs to be a pretty neutral smell

    Corn Cob Syrup
    [IMG]

After cutting off corn and canning, make corn cob syrup from the cobs...

Put all the cobs in my bid stockpot and covered them with water, bring to boil and simmer for 2 hours.
Strain to another pot, toss the cobs

Add sugar to the "corn juice," adding one part sugar to two parts liquid.
Stir in the sugar(s), bring to a boil, and boiled gently until the mixture reduced and thickened to a syrup consistency.

    Meanwhile, sterilizedjars and lids
    [IMG]
Once the syrup had reached the thickness you want, add a little vanilla extract (optional) and fill jars, leaving a half inch headspace.

Process jars in a boiling water bath (covering the jars with water) for 10 minutes.
