Recipe little or no fuss Stuffed Bell Pepper casserole

    Ingredients:
    • 3 Bell peppers, coarse chop
    • 2 large Onions, coarse chop
    • 1.5 lb ground Beef, bulk sausage, Turkey, moose, whatever meat you got.
    • 3 cups cooked rice (1C rice uncooked + 2C broth or water) cook separate
    • 24ounce can of Pasta tomato Sauce
    • 2 cups grated Italian cheese blend
    • Spices, tsp Salt, tsp minced Garlic or powder, tsp Black Pepper,
    • Spices, tsp Italian seasoning blend (basil, oregano, thyme)


    Instructions: preheat oven to 350F, Brown Meat in large skillet, remove meat with slotted spoon to large mixing bowl. Remove excess fat from skillet, you need no more than 2 - 3 TBS to saute Onions and Bell Peppers until softened. Dump veggies in mixing bowl with meat.
    Add all the rest of ingredients, mixing well. Lightly oil sides and bottom of 13" x 9" baking dish or lasagna pan. Dump mixture into baking dish. You may sprinkle top with bread crumbs or additional cheese (optional). Bake uncovered in 350F oven for 30 minutes or until sauce is bubbling. Allow to rest for 10 minutes or so upon removing casserole from oven. ENJOY

    This sounds really easy and good. My kids have never had stuffed peppers. I think they would really like this plus this sounds easier to re-heat leftovers.

    Can you clarify the rice. Is that normal rice or minute rice?

    any kinda rice will werk but please consult Tac as to what werks/tastes best :) :)

    Any uncooked rice will work after being fully, normally cooked, whether quick cooking, or just regular dry. Brown rice dry and raw normally take almost double the time to cook. I use seasoned yellow dry raw rice. In this particular case I used a regular long grain white and wild rice blend.

    Okay detail on the rice. I buy 2types in 3lb plastic containers. This one was called a "garden harvest blend" it is almost like a general pilaf blend. It has long grain white rice plus wild rice, and an assortment of dehydrated veggies plus herbs. However ANY Rice will do. You just need approx 3 cups of cooked rice.

    MM34, please do NOT buy that rice! I pay less than $6 for 3 lb and consider it a luxury item. Any rice will do just fine.​

    I'll bet ground gator would work just fine. Post shtf gators are going to be greatly reduced in number. Yum YUM.

    I ran out of Italian cheese blend so I shred some cheddar on there. Probably won't do that again. This is the casserole prior to baking.
