Tomorrow, September 27th is World Pancake Day. Why am I posting this? Because pancakes are so easy to make and there is no one-way to make them. Pancakes are one dish you can make more ways then I can list. Basic Pancake recipe: 1 c. all-purpose flour 2 tbsp. sugar 2 1/2 tsp. baking powder 1/2 tsp. salt 1 1/4 c. milk 3 tbsp. butter, melted 1 large egg vegetable oil for brushing pan That is all it takes but even that recipe above can be altered. Substitute applesauce for the egg. Substitute olive oil for the butter. Here is a recipe that uses baking soda and baking power: Dry Pancake Mix 4 cups all-purpose flour 3 tablespoons baking powder 2 teaspoons baking soda 1 teaspoon salt 3 tablespoons sugar To Make Pancakes 1 cup pancake mix above 1 egg 1 cup milk 1 tablespoon melted butter or oil After you get the basics then comes the fun part, the flavoring. We love nutmeg and almond extract in ours. When I have fruit, I will zest some lemon and add blueberries. Currently it is pumpkin spice time so why not pumpkin spiced pancakes? All it takes is some pumpkin puree, more dry ingredients, spice and brown sugar (or you can leave the extra sweetener out). Pancakes can easily be cooked over a camp fire or on the grill. Pancake dry mix is light and can be made ahead of time. Pancakes are cheap and filling. When the kids were young, I would make the batter a bit runnier, cook it up & roll it with jelly or some scrambled eggs. Basically a crepe but fluffier. One of my favorite pancakes is oatmeal. This is really filling but adding oatmeal adds nutrition and are so good. Oat Pancakes 1-1/4 cups all-purpose flour 1/2 cup oats (quick or old fashioned, uncooked) 2 teaspoons baking powder 1/4 teaspoon salt (optional) 1-1/4 cups fat-free milk 1 egg, lightly beaten 1 tablespoon vegetable oil So how do you like your pancakes? What do you add to yours for flavoring? Spices? Fruit? Wheat germ? Paleo pancakes?
Whole wheat flour, add some fresh blueberries or quartered strawberries. Real maple syrup...none of that fake corn syrup goop.
It was a tradition, every Sunday I would make chocolate chip pancakes for my wife. It's easy, just add the desired amount of chips to your pancake batter. You can change it up by using Reese's peanut butter chips, or white chocolate chips.
If we go back to the old definition of "pan" cakes, they are one of the worlds greatest survival foods. Cook quickly, do not need an oven, store for days with no refrigeration etc. Lefse, flat bread, tortillas, crackers, pita bread, American Indian fried dough, pan breads of India, every group had their own bread cooked on a hot griddle or around a stick and used like a cracker or a plate for food and all were non rising and did not use baking powder etc, Modern pan cake, with something to make it rise is another whole subject. Wood fire and cast iron fry pan are all you really need, or even a steel plate for a griddle. Love pan cakes and waffles, little bit of home made bisquick type mix and there are so many things you can make, doesn't require refrigeration, can make it with or without eggs, milk, or add things to make biscuits etc.
Right! So it's pancakes tomorrow...now just need to decide what berries to add to the mix and if we want them for breakfast or dinner...or both!

Na, I'm good. Waffles are far superior to pancakes. So much so, that they get two days per year for celebrating. I was so busy eating waffles on the most recent day, that I forgot about it being Waffle Day. Waffle Day | Days Of The Year When I reduce myself to consuming pancakes, I generally like them with sliced bananas on top, or even a banana folded inside a pancake. Another topping I like, is mango. I would like strawberries. But, unfortunately, they are difficult to find here.
My husband's pancakes are far superior to mine. We use Krusteaz mix, always easy, always perfect. I love maple butter, but since it's pricey, applesauce for me most of the time.
