Recipe V8 Juice or Bloody Mary Mix

    I love spicy V8 juice but I don't like to pay for it. Besides its a great way to use up canned tomatoes

    Ingredients:

      • 1 tablespoon extra virgin olive oil
      • 5 medium-large tomatoes, chopped
      • 1/2 onion, chopped
      • 2 cloves garlic
      • 1 beet, chopped
      • 1 carrot, chopped
      • 1 tablespoon honey
      • 1 dash tabasco sauce (or sriracha sauce, I sometimes add horseradish)
      • 1 dash worcestershire sauce
      • salt & pepper
      • 2 small cucumbers, chopped
      • 1 stalk celery
      • 1/4 cup fresh parsley
      you can add any veggie you like, spinach, bell peppers etc


    Instructions:
    1. Add olive oil to a large pot over medium-high heat.
    2. Add everything except cucumbers and parsley to the pot and bring to a simmer.
    3. Cook on medium for about 30-45 minutes, stirring occasionally to help break down the vegetables.
    4. Season to taste with more salt, pepper, tabasco and worcestershire sauce as desired.
    5. Remove from heat and transfer to a blender.
    6. Add parsley and 1 cucumber.
    7. Pulse 2-3 times just to break up the chunks of vegetables remaining. The consistency should be like a thick, chunk soup at this point.
    8. Transfer from blender to a food mill.
    9. Using the smallest holed plate, run mixture through the food mill.
    10. Transfer the mixture back to the blender, add the remaining cucumber and blend for about 1 minute on high to get a nice smooth, juice consistency. It will still be thicker than a normal juice, but not chewy.
    NOTES: if using canned tomatoes this does not require as much cooking time you just need the tomotoe juice base boiling as you add other veggies (except the cucumbers and parseley don't boil these as it makes it bitter)

    Wow I guess that would be a SHTF fallback recipe.

    My Sunday morning BM's, in order of ingredients:
    16 oz beer glass, 3/4 full of cubed ice
    2 shakes of Salt.
    2 grinds of Black Pepper, coarse.
    Dash of Lime Juice.
    Large shake of Tabasco (or to taste).
    Short dribble of Worcester (or to taste).
    Dash of Celery Salt.
    Add 2 oz (4 pour) of the cheapest Vodka (after everything else you won't taste the difference).
    Fill to top with V8 (regular, not spicy or low salt).
    Add stalk of celery for stir stick.

    Sometimes we'll go with a garlic stuffed green olive or two just in case we skip breakfast.

    @Ganado Thanks! I will give this to the wife as she was lamenting over what to do with all the extra tomatoes we got this year. She already made tons of Salsa and Spaghetti/Pizza sauce. I drink V8, have a case sitting next to me at this moment, and never thought to use the extra tomatoes to make our own. She did make a lot of tomato juice but this will be better. Thank you!

  5. Mom decided to can only whole tomatoes, took less time at a very busy time. Then she would make what ever she wanted to use them for at usage time. Puree, juice, whole, what ever was needed.

    Add a ice cold beer instead of ice for a summer time liquid lunch or post work out refreshment, I like to add clam juice to mine and top with grated parma cheese, or sub out the tomato juice with paste and make a most excellent sea food dipping sauce or spread over linguine and add sea food of choice for a nice light pasta dish!

    Dammit, now i'm hungry!

    IF she has already canned the tomatoes or juice, no need to cook as long, just long enough to soften the other veggies.

    re fried beans and add jalapenos or in my case sriracha (I love the stuff)

    If you are @Gator 45/70 you add Tabasco ;)

    Tomato canning has a rhythm to it. just depends on your end use.

    I'm not a fan of a lot of whole tomatoes canned. I like to pull out a jar of marinara sauce or juice ...less cooking in the winter but it does require more cooking/processing upfront. When i make marinara sauce it has to cook down so I use more tomatoes and fewer jars. I'm lazy/efficient.

    I did this recipe this morning out of hangover desperation, I did not have the cucumbers so I subsituted zucchini and skipped the honey and beets. (zucchini is fairly sweet) it was better than the original recipe

    I have a head cold now and had a bit of the juice left over, So I added broth,Tabasco, tomato paste and coconut milk from a can. Makes great creamy tomato soup

    Cooking and using what you have is a great big chemistry experiment.

    If you are going to blenderize it anyway, I'm just wondering how necessary the cooking is. I can see sauteeing the onions and garlic for the difference in flavor, but not sure how necessary the rest is. A good blender can demolish a carrot

    yeah but I haven't gotten it yet I went with www.sfherb.com for the tomato as it's half the price... its the powdered Worcester im in love with. will update you later
