One of my favorite summer recipes is so quick and easy to make. I use a wok or a soup pot, can substitute lump crab for the crawfish if you like, both are good. Two ears fresh corn sweet onion chopped mushrooms 1 lb. crawfish tails stick of butter cup half and half small bottle clam juice salt, pepper, Thai seasoning or Slap Your Mama Melt stick of butter and begin sauteing chopped onion, remove corn from cob and add to onions that have now been cooking for a few minutes.salt and black pepper liberally. Add chopped mushrooms, keep stiring while they cook, add crawfish tails. When mushrooms are tender, add half and half and clam juice. Let simmer for a few minute, ad Thai pepper or Slap Your Mama to taste. I like to thicken the broth with a little corn-starch and water. Serve with crusty bread and a garden salad.
What are the odds that merely minutes before seeing your post here, i would read and note a recipe for Shortcut Crawfish Corn Bisque at WWW.DeepSouthDish.com ? . Actually they are not calling it a chowder, and compared to Seacowboys recipe it is no shortcut, but is more complex. Deep South Dish has some awesome recipes.
