Recipe V8 Juice or Bloody Mary Mix

    I hadn't heard of them. I'm considering getting some hibiscus and lavender to try adding to my saffron rice.

    Thoroughly rinse the rice to get any potential flour dust off. (It's amazing how many things are contaminated with wheat flour dust and so many people with celiac disease don't understand and think it's their cooking utensils and throw them out)
    Add the appropriate amount of water for steaming the rice along with salt, pepper, turmeric, saffron and garlic. Keep it covered and cook on high until the water starts to boil (about 5 minutes) then turn the heat down to the lowest level that has a steady flame and cook until tender and the water is absorbed. Don't lift the lid if you don't have to, that will add a few minutes for each time you do, and risks burning the rice to the bottom of the pan. Using a heavy stainless steel medium sauce pan with a reasonably good fitting lid, on my stove it will take 17 minutes of steaming (time starts when you turn the temp down) to cook 1 and 1/2 cups of rice as measured by volume when dry. Once it's done, put 8-10 oz by weight frozen peas on top and recover for 10 minutes off the heat and then stir. The residual heat of the rice will thaw and lightly steam the peas so that they are not mushy and have a little pop when you bite them. Alternately, some times instead of green peas, I'll let half a cup of dried lentils soak in water until they rehydrate (2-3 hours) rinse them and add them to the rice at the time of cooking

    I get my saffron from Rumi Rumi Spice: Buy Afghan Saffron Online | World-Class Chef Quality – RUMI a co-op in Afghanistan. The American troops there started it realizing the local farmers could make a better living without the risk from drug cartels by growing saffron instead of poppies. It's the freshest that I've found. Other suppliers I've tried, the saffron is so old or potentially counterfeit, that it has little if any flavor. Saffron is a very perishable item. Don't buy it in bulk, unless you have a restaurant. I use about 10 strands for a pot of saffron rice

    no anchovies in the dried stuff. Ok in a pinch but I'm sticking with the real thing as long as we don't have a zombie apocalypse

    Maltodextrin unless it specifies Corn Maltodextrin, or Rice Maltodexrin is almost always from barley or wheat, so not gluten free. Despite being allergic to fish and having Celiac disease, my reaction threshold is lower for Celiac, so I can tolerate small amounts of L&P Worchestershire in a marinade or sauce without my throat closing, whereas the powder would undoubtedly have me in the bathroom all night. My guess is the anchovies are so reprocessed that their proteins have been denatured. Maltodextrin from wheat and barley is also a common binder in medications. I can take Bayer aspirin, but not generic and have found no decongestants that are gluten free

    made some gluten free mini sponge cakes flavored with hibiscus and rose hips. They were very tasty. That place has some ingredients I'd never even considered before. Thanks for commenting on it

    Re the anchovies in worchestershire, It could also be due to it being fermented.
    I react very unpleasantly to soy, (very very unpleasant....ly....) but can handle properly fermented soy sauce without any reaction (course, finding wheat free soy sauce is fun to. cause I also dont react so well to wheat. Not celiac.. but definatly intolerant.) have also had natto before without any reaction. (Fermented soy beans)

    Just need to look for Tamari Soy sauce. I usally get Yutaka.

    Tamari is more the traditional type recipe as far as I understand. So no wheat in the ingredients. Clearsprings does a good one to but hard to find most the time.. just checked and kikkoman does one thats the Tamari type also.

    Yeah, You cant trust anything anymore. :cautious: Never assume because it “shouldent” have something... that it dosent.....
