    Phil Says Spring is Right Around the Corner!


    Phil's official forecast as read 2/2/07 at sunrise at Gobbler's Knob:

    El Nino has caused high winds, heavy snow, ice and freezing temperatures in the west.

    Here in the East with much mild winter weather we have been blessed.

    Global warming has caused a great debate.

    This mild winter makes it seem just great.

    On this Groundhog Day we think of one thing.

    Will we have winter or will we have spring?

    On Gobbler's Knob I see no shadow today.
    I predict that early spring is on the way.

    Ya know, I've been waitin' on WINTER (<--as it's my most FAVORITE TIME OF THE YEAR!).
    How absolutely annoying... If that darn GROUNDHOG comes a n y w h e r e near our place

    Just talked to my bro' at home, 3' snow drifts, 18 below, he's been snowed in for four days..... YESS spring has spung,,, only 18 below..... only 3' drifts......

    Quarter one medium ground-hog and marinate over-nite in a mixture of
    1/2 cup Balsamic vinager
    2 tbs cayene pepper
    1/4 cup honey
    four oz. can tomato paste
    2 tsp salt
    fresh gound black pepper
    Place in roasting pan and bake at 350 for 50-60 minutes
    pull cooked meat from bones and serve on toasted onion rolls with vinager based cole-slaw.eek3 NO!!
    Contry-Style Groundhog


    1. 1 groundhog
    2. 1/2 c. flour
    3. 1/4 tsp. salt
    4. 1/4 tsp. pepper
    5. 1/4 tsp. soda
    6. 1/4 c. cooking oil
    7. 1/2 tsp. sugar

    NOTE:Clean and skin as soon as possible. Remove all sent glands. Cut off head, feet and tail. Cure in cool place by suspending from hook approximately 4 days. When ready to cook, lard according to recipe. Dress groundhog as for rabbit, removing the small sacs in the back and under the forearm. Soak groundhog overnight in salted water to remove wild flavor. Combine flour, salt, pepper and sada; rub into groundhog pieces. Brown grounhog in hot oil in skillet; sprinkle with sugar. Reduce heat; add 1/2 cup water. Cover; simmer for about 30 minutes or until tender. Remove cover; cook for 10 minutes longer.

    1 woodchuck, skinned and cleaned
    1/4 cup onion
    1/4 cup green pepper
    1/2 tbsp minced parsley
    1 tbsp. salt
    1/8 tsp. pepper
    4 1/2 tbsp. flour
    3 cups broth
    Biscuits:
    1 cup flour
    2 tbsp. baking powder
    1/4 tsp. salt
    2 tbsp. fat
    1/4 cup milk
    Cut woodchuck into 2 or 3 pieces. Parboil for 1 hour. Remove meat from bones in large pieces. Add onion, green pepper, parsley, salt, pepper, and flour to the broth and srit until it thickens. If the broth does not measure 3 cups, add water. Add the meat to the broth mixture and stir thoroughly. Pour into baking dish. For biscuits: sift flour, baking powder, and salt together. Cut in the fat and add the liquid. Stir until the dry ingredients are moist. Roll only enough to make it fit the dish. Place dough on top of meat, put in a hot oven (400 degrees F.) and bake 30 to 40 minutes or until dough is browned. Serves 6-8.
