    Surf: cleaning a Catfish?
Turf: cleaning a armadillo without getting leprosy?
Looking for the knowledge not readily available in common print. JMHO.

The variety of leprosy carried by armadillos is not the same as that which affects humans...but I still don't want any, thank you very much ;)

When I was a boy, a substantial part of our diet were Tennessee river catfish. We fished trot-lines and would have hundreds of lbs to clean on good days. I had a cleaning tree with a 16D nail driven into it and the end sharpened to impale the catfish through it's skull and hang it while peeling the skin and gutting. Got pretty darned efficient at it and several of the commercial fishermen would bring me their catch to dress and they would pay me in fish.

Armadillo and cat fish are easy to clean

When you clean a armadillo it shell makes a bowl to put the meat into.

You know, I wonder just how few recognize a set of fish-skinners anymore? Good quality ones are really hard to find now; guess people just eat farm-raised grocery-store catfish anymore.

Or use a fillet knife. Last time we put out the fish boxes we had a couple of hundred pounds of catfish. Wife's uncle showed me a pretty slick and fast way to fillet them out with both electric and by hand. Pretty slick and clean fillets ready for the vac sealer. We put up 4-500lbs of catfish every year. We all love it, and the wife's uncle puts on a fish fry for his church every year.

So I've heard a 16 penny nail through the head, but nary a mention of (Philippine Flyers) pair of pliers. Mud cat, Channel Cat, Mississippi Monster? How tall did the tree need to be for your catch.

About eye level, nail the fish, cut around underside of the pectoral fins , peel em with the skinners, gut, chop off head, toss into ice.

And that's why you don't use a long blade knife for skinning game no control over the blade and it would be a lot easier to hang by the back legs

What's the Turtle/Tortoise situation like in Y'all's neck of the woods?
I'm going to leave coconut crab out of this conversation, mostly due to the heavy fines levied.

I've never seen those before. Does it make skinning easier? @Gator 45/70 or @Seacowboys I've always used a fillet knife

I have my late father's fishing gear, which includes his catfish skinners, fish scalers, oyster knives, and cast net. I used them all, so they could be of use again, as I know the techniques.
Never messed with 'dillos though, nor possum.

There is no need to fillet a catfish, once skinned and deep fried all one needs to do is rub a fork down the backbone. All the meat shall fall off onto the plate, merely toss the skeleton aside. JMHO.
