    Here in the States we have to be careful with wild hogs, I always wear latex gloves when butchering and cook the meat well done due to ----
    brucellosis -- a risk factor with feral hog meat -- is different. The germs that cause brucellosis are spread among hogs through birthing fluids and semen. Infected hogs carry the germs for life. People may get the germs through contact with an infected hog’s blood, fluids, or tissues (such as muscles, testicles, liver or other organs).
    Do you have that problem in the islands Alanaana ?

    Let me know how it turns out. I know it is not traditional. Just my lazy man's way to still eat well. I do chicken that way too. Just wrap each whole chicken separately. Same thing. Your nose will tell you what you need to know. When you really start to smell it, just let it go for a bit more. Maybe stop adding to the fire and let it burn down.

    By the way, I throw steaks on top off the bed of coals too. One time I did that at camp and one of the little kids ran off yelling, "Mommy! Mommy! Uncle throwing the meat in the fire." But after, they were delicious.

    Try "overcooking" with the "imu" method. Will be so tender!

    I was all produce too. I give it a soak in water with a squirt of dishwashing detergent. It helps break down anything with an oil base, like pesticides. Agitate, rinse and repeat. For anything that I will eat the skin, I also scrub with salt. Then rinse off really well. Pesticides and rat lung worm disease are both no joke.

    I just want to reintegrate to the young men of the world just about how perfect this young lass is.
    She has shot, killed, gutted and loped off its head while having her first cup of Joe.
    This says this lass is pretty much perfect and a badass on a whole different playing field and she smiles about it !!!
    I'm surprised no one has noticed her cool calm as a pickle demeaner?
    Young men of the world, This is whom you want standing on you're right side going thru life.
    That is all...or not?

    My partners on the farm here are the same , its me who gets the turmoils ..
    So the girls do the processing , I do the hanging / hunting / road kill pick-ups .

    Just did a search for rat lung worm seems it is a tropical disease with Hawaii being a center for it. Can be found in shrimp, crabs, slugs. No mention of it in SC wild hogs. Worms won't mature in hogs but remain dormant and can infect humans.
