Recipe Grandma's Carrot Cake

My Grandma B used to make this for us all the time when we were kids. I always put cream cheese frosting on top, but then again cream cheese frosting is like bacon...it would taste good on a flip flop.

2 cups flour
2 cups sugar
3 eggs
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
2 tsp vanilla
1 1/2 cups vegetable oil
2 cups grated carrots
1 cup chopped nuts
3/4 cup coconut
1 can of pineapple pieces, drained

Combine all ingredients and put into a greased 9 x 11 pan
bake in a 350 oven for roughly 45 minutes or until a toothpick comes out clean from the center of your pan.

'flip flop' cream cheese frosting

8 oz softened cream cheese
3 tbsp soft unsalted butter
1 tsp vanilla
1 lb confectioner's sugar

Whip until fluffy and then top carrot cake, or flip flop if you will...

It's easy. Go back to your original recipe post, go to bottom of your post and click on edit. This will take you to a whole new page where you can go into the body of your original post and alter or add to it. In this case I was thinking you could add the icing recipe below the cake recipe so they were both right there. Once you are done editing click on save at the bottom, just below where you are editing. It's that easy.
