Awesome Recipe For Rabbit

    Take a butchered rabbit a big or small as you want, Season it to your taste.
    Place it in a baking pan facing down,
    Cover it with tin foil, Turn oven to 225*, place rabbit in the oven for 3 hours,
    Remove and turn over on its back, recover, place back in the oven for an additional hour
    Its ready!!!!


    Take a Rabbit and debone it,
    WARNING!!!! THAT STUPID SONG IN THE VIDEO WILL STICK IN YOUR HEAD!!!
    This guys incredibly good at it, takes me 10 minutes
    Season the inside, stuff with Red, Yellow, Orange Sweet Peppers and Swiss Cheese
    Tuck the ends in and roll it until it resemble a pork roast, Wrap it in Bacon completely
    Preheat oven to 350* place rabbit in a covered pan and let cook for 90 minutes (60 min. if you don't stuff it).
    Remove lid and turn on broiler for about 5-10 minutes to crisp up some of the bacon
    The broth makes wonderful Gravy.

    Low and Slow for Rabbits! My aunt from the UP makes it that way, She adds a bit of BBQ sauce,. FINGER licking GOOD

    I found a faster way to cook Rabbits and get very similar result as slow cooking.
    Place seasoned rabbit in a pressure cooker with 2 cups of water, put on high heat and let steam exhaust for 10 minutes, place the weight on and set timer for 35 minutes.
    If you want a stew just add a 3rd cup of water and all your veggies. I found the problem with that is the Rabbit literally falls apart and its hard to deal with the bones.
    We have 2 pressure cookers so I do them separately.
    When you pressure cook them as opposed to slow cooking them you use a lot less electricity.
    They taste slightly different but not enough to make a real difference.
    On the UP side you can have an entire meal in 1/2 an hour ready to go!

    Mmmmm, sounds soooo good. Last gathering A lady skinned one out and prepared it. I deboned and cut it up into. Placed it into a 4 quart stew pot and lightly browned it in olive oil/seasonings. Added veggies and cooked slowly till veggies done. After seconds and thirds there was nothing left but a small bit of juice.

    Every time I cook it, never ceases to a amaze me how much it smells like baked chicken.
    With the all meat prices going up through the roof, many more will eventually get tired of paying so much and turn to raising Rabbits.
    Its already happening, the demand is outweighing the supply.
    Rabbits cannot be raised commercially, like other meat sources because they require finesse or they die. As a result, small farms and breeders are required for this.
    I saw an article on Rabbit meat the other day, its selling for $7.99 a pound. That's a pretty good payoff considering it only costs about a $1 per Rabbit to raise them to 3-4 months.

    Hard to beat rabbit. Easy to raise, will eat most anything organic, garden veggie scraps never go to waste, and the "poop" is fantastic fertilizer--not to mention a great worm bed.

    Rabbit Fajita's
    This has become my favorite recipe recently!
    Place rabbit in a pressure cooker for 30 minutes, remove let cool and pull meat from the bone and chop.
    Cut up sweet peppers and onions into long thin pieces about three cups of each.
    3 cloves of garlic finely chopped I use a press.
    1-2 Large Jalapeno Peppers (Hot Hot Do YOU LIKE IT):D
    1 package of Taco mix
    add Salt if you wish
    3 tbl. favorite oil
    Simmer till cooked and roll it into a Tortilla, Sour Cream, Salsa...

    It's not that easy pulling the backbone out! I have done it 20-25 times his way and it never comes out that smoothly.It may be that the rabbits he was doing were frozen or refrigerated for a few days, mine are always right off the hoof.
    I have an easier way, I taped that as well. My Daughter timed me butchering the rabbits, I average out at a minute and a half.
    I usually do about 8 at a time, but I got lazy and skipped a batch so last time I had 20 to do, that was grueling!

    I had two rabbits given to me from a coworker. Will have to pull them from the freezer at work and try out this recipe.

    It is just like "chicken" when prepared with "Helper".... Hamburger, Mooseburger, Chickenburger, they all go better with "Helper"....

    Rabbit Jerky
    1 cup Soy
    1/2 cup brown sugar
    2 ounces finely chopped Ginger Root
    1 Tbls Crushed Rd Pepper
    2 heaping tbls minced Garlic
    2 tbls Sesame oil
    Heat until sugar is dissolved.
    De-bone 2 Rabbits. Cut into small pieces and soak in sauce for 4 hours.Place on tray and place in the oven at 180* for 8-9 hours. Done
    This Teriyaki Recipe also works with any kind of meat and is great for stir fry as well, although you might want to scale the quantities down.
