So far, everyone that has tried my chili has pronounced it the best they have ever had. I am going to share this recipe because I realize that most of you are two lazy to actually cook it this way and will never really get to try it unless you come down and visit Seacowboys. It is critical that it be cooked in this manner or it will just be really good ordinary chili.
Saute two pounds Chirizo and add to chili pot
Saute three pounds of ground chuck and add to pot
Saute two pounds of sirloin tips cut into small pieces and add to pot
chop eight large onions and caramelize completely then add to pot, deglaze skillet with red wine and add to pot
roast six large chili peppers and eight jalapeno peppers and a bell pepper or two under broiler until completely charred, then remove skin and seeds and add pulp to chili pot.
Roast two cloves of garlic and add to pot.
    add teaspoon of sweet paprika
    add three table spoons salt
    add table spoon black pepper
    add table spoon of cayenne
add half cup Louisiana hot sauce
    add table spoon cumin
add three table spoons chili powder
add two quarts garden canned tomatoes
add three cans black beans, two cans dark red kidney beans, two cans light red kidney beans, two cans of chili beans, and any left-over beans or peas sitting around in the refrigerator.
Bring to a slow simmer and cook for two hours, stirring frequently.
This will be so good, it will make you slap your momma for not fixing it for you.

How many freakin gallons does that make? Sounds excellent, but I would have to own a meat market or take a neighborhood collection for a couple of months to make it. Maybe I could make the road I cleared back into the hood where I now live into a toll road since we got 7 families back here now. It is nice being 2.4 miles off pavement.

You're probably the only one I know who probably makes chili that will rival mine. Send me some and I'll let you know

It pretty much fills a 12 quart pot when we make it. You can always cut it in half.

Funny recipe but it sounds real spicy. I know I could never eat that- you Southerners like things hot.
