    I recommend you get the best quality bacon you can find. If you can find thick cut Applewood smoked I would suggest you use that because it has a nice smoke flavor that will not overpower the jam as the bacon mixture reduces. Good quality bourbon is also a suggestion I would make. Don’t go crazy and use best quality, but please do not use anything in a plastic bottle for this. The maple syrup, however, should not be the very best quality. Any B grade will be fine here because you want the deep maple flavor and the sweetness, but since it is not the star don’t spend the money. Serve this jam on toast, in a panini, on a buttermilk biscuit, with sliced apples, or with some sharp cheddar cheese. I will not disappoint.
    Bourbon Bacon Jam Yield 1 1/2 cups
    1 pound thick-cup applewood smoked bacon, cut into 1″ pieces
    1 large sweet onion, cut into 1/4″ thick slices
    3 tablespoons light brown sugar
    3 cloves garlic, minced
    1/4 teaspoon allspice
    1/4 teaspoon cinnamon
    Pinch fresh grated nutmeg
    Pinch ground cloves
    1/2 teaspoon dry chipotle powder
    1/4 teaspoon smoked paprika
    1/2 cup strong brewed coffee
    1/4 cup apple cider vinegar
    1/2 cup good quality bourbon
    1/4 cup maple syrup
    1 tablespoon hot sauce

    In a large skillet over medium high heat cook the bacon pieces until the begin to crisp at the edges but are still soft in the center, about 1 – 1 1/2 minutes per side. Set aside to drain. Pour all but one tablespoon of the bacon drippings from the pan.

    Lower the heat to medium-low and add the onion and brown sugar. Cook until the onions are well caramelized, about twenty minutes. Add the garlic and spices and cook an additional five minutes.

    Add the liquid ingredients and the bacon to the pan. Increase the heat to medium heat bring the mixture to a boil, then reduce the heat to low and simmer for about two hours. Check the mixture every 30 minutes. If the mixture becomes too dry add a few tablespoons of water. You want the final mixture to be moist and very sticky.

    Let the mixture cool slightly them put it into the bowl of a food processor, or blender, and pulse about 20 times, or until it reaches your preferred consistency. (I prefer mine slightly chunky so you really notice the bacon)

    Enjoy, or store in an airtight container in the refrigerator for up to a week.

    I just saw a jar of bacon jam on a food blog and thought what a disgustingly fantastic idea...bacon is like mind control for my husband so I will be making this tomorrow and let you know...I am thinking on a grilled cheese.

    I had a burger recently at a kind of upscale place and they served this on their burgers. It was fantastic. A great new alternative condiment! Better tasting than I was expecting.

    you guys are making me hungry....
    Maybe I should write up a how too on making and curing your own bacon... it's pretty easy... but damn hard to wait the 12 to 14 days for it to cure...

    12 to 14 days? That is seriously slow. I can get good smoked bacon in just under 4 days, with a total smoking time of 6 hours. Cold smoked, mind. Just follow Alton Brown's recipe...
    Caveat: this is for people without a smoke house, or a cold smoker - just build one!

    Ingredients


    • 1 cup sugar
    • 1 cup salt
    • 8 ounces molasses
    • 1/2 gallon (2 quarts) water
    • 1/2 gallon (2 quarts) apple cider
    • 2 tablespoons course ground black pepper
    • 1 (5 pound) piece raw pork belly from the loin-end


    Directions

    In a large non-reactive pot, bring half the water, 1 cup of sugar, salt, and 8 ounces molasses to a boil. Stir to dissolve the sugar. Pour into a large container with the remaining water, and the apple cider. Place in the refrigerator and cool to 40 degrees F.
    Press the black pepper into the pork belly. Once the brine has cooled place the peppered pork belly into the mixture until completely submerged. Refrigerate for three days.
    After three days have passed, remove the pork from the brine and pat dry with paper towels. Lay on a rack over a sheet pan and place in front of a fan for 1 hour to form a pellicle. Lay the pork in the protein box of a cold smoker and smoke for 4 to 6 hours.

    Chill the meat in the freezer for 1 hour to stiffen for easy slicing into strips of bacon. Slice what you need and keep the remainder in a freezer safe bag in the refrigerator or freezer.

    Place the strips of bacon onto a sheet pan fitted with a rack and place into a cold oven. Turn the oven to 400 degrees F and cook for about 12 to 15 minutes, depending on how crispy you like your bacon. Remove from rack and drain on paper towels. Enjoy.

    To make these Bacon Pancakes super easy to make I poured the batter in a squeeze bottle. TIP: Make sure the hole at the tip is large enough for the batter to easily go through. Squeeze some of the batter onto a hot griddle in the shape of the bacon, place a piece of bacon in the center and add more batter on top in a zig-zag pattern
