I can't/won't do shellfish due to allergies For my 50th B-Day I smoked 3 boston butts on my Smokey Mountain. Wife didn't want me making anything for my b-day but I wanted pulled pork and I'm not buying any overpriced/overcooked crap from the local stores. I make my own rub for the butts and use that rub to make my own sauce.
Made dinner for mom. Salmon, two ways. Veggies. I smoked this bacon over a brisket while I smoke braised the brisket. After both were smoked for 10 hours at about 160, the bacon was done and I finished the brisket covered in the oven. Chill it all, save the grease from the drippings for later use, sliced the brisket and drizzled the concentrated juices back over the meat before serving. Absolutely wonderful taste boost from the bacon drippings to the brisket drippings!
