with a twist. Originally got the idea from Pipemaker, but have modified it to better suit us. The main thing to know is the proportions. 3 dry to 2 honey. The original recipe called for 2 cups flour, 1 cup corn meal and 2 cups of honey. Put em in muffin tins and bake for 15-20 minutes at 350. I have been using corn flour and also adding chia. Today, I used what we had and I think it will give both a quick boost as well as a long energy burn. Couldn't find our corn flour so used gluten free flour (used all we had...1 1/2 cups). Our corn meal was all gone, so I made my own by grinding dried sweet corn (1 1/2 or so cups). Added a couple of scoops of chia. The trick with the honey is to gently warm it before mixing. Warm, not hot. Dry & wet Batter up The clean up Made two muffin tins Just in time for my wife's very long 22 mile trail race.
