There is a guy in the southern part of my state that did one about a month ago and my mouth still waters when I think about it .
He did his with sidemeat from a just butchered hog and if I could cook like that I'd start my own business .

As for Sodolak's....I've eaten there, EL...and just had to try that bacon. One piece.....Kind of a waste of good bacon, but people eat the heck out of it....Said they sell out every day......
