A guy on the carnivore diet that I work with says keeping his fresh rice in the fridge for 4 days leads to only 10% of the blood sugar spike that fresh rice does. The dude was Marine Intel and thus vigorously OCD with some high human-like cleverness.
You just said 'fresh rice' twice. I am not confused, but this could be seen as confusing. I take it he cooks the rice and then places it in the fridge for later? I'm not sure there's a difference between cooled precooked and truly 'fresh' cooked rice. Although, on another note I do store some parboiled rice in the fridge inside Ziplocks just because I think it stays happy this way before cooking. And this reminds me of Japanese scientists saying nice things to their cooked rice and it keeps longer than rice that they yell at and call naughty names. True story...
Yes, I meant rice cooked and eaten immediately causes a much higher blood sugar spike than rice eaten 4 days after cooking.
The words Carnivore and Rice cannot co-exist. Carnivore is 100%, only meat. If he is eating rice, he is not on the Carnivore Diet. If he is keeping his carbs at or below 25 grams a day, then he is doing Keto. .....
