Heard of people doing the same with left over beans and peas, usually had them for breakfast the next morning...minus the sour cream.
I do the same with cabbage all the time. Okay, so I made some of these... I fried up some onions and garlic in butter, added it to the smashed peas, then blended and added an egg and flour and finally some rambo radish microgreens whole and fried in a cast iron skillet with avocado oil. The tea is a really nice compliment, it's a loose leaf black tea with heavy whipping cream as a whitener.
