Ingredients:3 lbs. ground beef 1.5 tbs Mortons Tender Quick 1ts Garlic powder 1ts Onion powder 1tbs brown sugar 1 ts liquid smoke 1 cup ice-water Instructions: Blend all ingredients until emulsified and pop into the freezer for 10-15 minutes Shape into two logs and wrap in plastic wrap, securing the ends with twist ties to maintain shape refrigerate over night to meld flavors remove wrapping and place on a baking rack with a edged catch pan underneath to catch drippings bake in a 300 degree oven for half an hour to dry outside and maintain shape reduce heat to 250 and cook for an additional 2.5 hours remove from oven and cool completely easier to slice with a sharp non-serrated blade after chilling. It needs a bit of fat to emulsify properly, I use 80-20 beef, but sometimes I'll add some pork sausage as well.
