Recipe Redwolf Blackened Catfish

    Ingredients:
    • Catfish (fillets are best, but if it cooks, throw it in the skillet. This will make enogh for 2-4 fillets, or 1-2 large skillet sized fish)
    • Cayenne Pepper
    • Paprika
    • Onion Powder
    • Garlic Powder
    • Gumbo File (not strictly necessary if you can't find it)
    • Salt
    • Black Pepper
    • Ground Coriander
    • Dried Thyme Leaves
    • Melted Butter or Olive Oil (or any other fatlike thing of your pleasure)
    • Skillet or Baking Tray (2 methods of cooking below)
    • Spatula
    • Rice (optional side)


    Instructions:
    Traditional (Skillet)
    Mix your spices together in a small bowl (Mine usually looks something like this):
    Equal parts Cayenne, Paprika, Black Pepper, and Thyme (For spicy, go about: 1 tsp)
    1.5x Onion and Garlic Powder
    around 1/4 tsp Gumbo File and Coriander
    1/2 tsp Thyme
    Salt to taste (I honestly add 2x the Cayenne to mine...)


    Lay out your fish: If you are concerned about cooking it through, you can cut it in half lengthwise on a whole filet (to about 2 fingers wide)
    Coat the top of the fish with the seasoning, using around half the mix.


    Turn your range up to medium high heat, and add the butter or oil to the pan, being sure to use enough to coat the bottom.
    Once melted/warmed, add the remaining spice mix to the pan.

    Lay the fish in the heated pan, seasoned side up. Note: If you are worried about grease splatter, you can put it in while the butter/oil is warming, but not heated all the way up to temp. It is also okay to push the fish side to side occasionally to make sure it isn't sticking to the pan.

    Cook until the sides become opaque, then flip to the seasoned side.

    Cook to "Blackened" level of your preference. (I usually cook mine around 5-7 minutes).

    Optional: You can mix rice into the drippings for a little Louisianian kick to the meal.


    Oven (Cooking Tray)


    Heat Oven to 425 degrees

    Mix your spices together in a small bowl (Mine usually looks something like this):
    Equal parts Cayenne, Paprika, Black Pepper, and Thyme (For spicy, go about: 1 tsp)
    1.5x Onion and Garlic Powder
    around 1/4 tsp Gumbo File and Coriander
    1/2 tsp Thyme
    Salt to taste (I honestly add 2x the Cayenne to mine...)

    Melt Butter

    Lay fish on tray.

    Drizzle the melted butter over the fillets, and add half of spice rub. Then flip them, and repeat. Note: in the Oven preparation, it is more important to get the rub on as evenly as possible. Bare sections often pick up little flavor.

    Put tray in oven. Let cook for 15-20 minute (use your own judgement on this. Everyones oven is different)
