Family really like my boiled peanuts. When I went to buy more raw peanuts, they were sold out. But I saw huge chestnuts on sale. Figure I would roast them. It is my first attempt. They came out delicious. Actually better than store bought. But I have a problem. The inner skin sticks something fierce on a lot of them. I've never roasted chestnuts, because they don't grow here. I'm starting to think the only thing that does grow here is moss.
Take out of oven and cover with a damp towel for several minutes, the steam helps loosen the inner skin.
Skin sticks is they are old & dry . I do mine in a stone pea/ bb size gravel (From a Beach & saved washed and sieved all the sand out ) with water in the bottom pan and steam them cooked. Just put a slight cut in each one so they don't blow Up !! That will MT the gravel quick & burn . October is the time to source them & keep cool , dark & 40% less . Winter treats in Canukland . Eat Brown ones only (inside meat colour), Horse ones cook greeny white & you will get EXIT BOTH ENDS NOW ! Toxic !! Sloth
