I love a good omelet, and when I'm not working, I cook a damn good omelet. I begin by cutting on the stove, preparing a pan and cracking a couple of eggs. I then let the contents of the refrigerator determine what kind of omelet I'll be enjoying that morning. Add a cup or two of coffee, toast, tabasco sauce or salsa, and I'm good till dinner (or whatever y'all call the midday meal). As a matter of fact, tomorrow is my day off...
