Smoker Is At 225

    Happy Memorial Day to all and a special thanks to all our folks here who served! You ARE appreciated!

    About 45 minutes ago, I hooked up my Char Broil vertical smoker to the propane tank and fired that sucker up. I got up about 1 AM and seasoned 2 racks of baby back ribs and let them sit in the fridge overnight. Also seasoned up a little sirloin steak and had my pure pork Cajun sausage thawed. I found my rib rack, put in the ribs and off we go! I'll add more wood every 30 minutes or so and do the 3-2-1 method. Best way of preparing ribs I've found.

    I've got some burgers and dogs, the steak, my sausage and will fix up some bbq baked beans, potato salad and deviled eggs. Still not sure about dessert.

    So what's everyone else having?? Inquiring minds want to know! LOL

    After honoring the fallen at 11, we will be having a late lunch of bacon wrapped filet on the BBQ.

    Happy Memorial Day!!

    Today I will throw some chicken leg quarters on the BBQ. I will slow cook them on the cool side and toss in a piece or two of mesquite and smoke it up a bit. Add some olive oil, seasonings and this new habanero/pineapple sauce I am trying out. :)

    I have a new cosco near me. I'm trying o get my boss to cover the memberships for the entire crew;) it would save him on gas costs, and us on foodstuffs as well as personal gas costs. I look forward to checking out the new store.

    The smoker in the ready position...

    Our menu: St. Louis style ribs; slow and low at 175 for 4+ hours, corn on the cob, ranch beans, cole slaw, potato salad, jalapeno poppers and peach cobbler w/ vanilla ice cream for those that saved room. Fresh squeezed lemonade, Storybook Mountain zinfindel (not the pink stuff!), Hafner chardonnay, Boulevard Saison Brett, Sierra Nevada Pale Ale and Harpoon's UFO Big Squeeze Shandy to quench the thirst...

    To my fellow veterans and their families, a heartfelt "Thank you". At our home, we do not "celebrate" Memorial Day as some may. Instead, our focus is on recognizing the sacrifices given by so many to protect our liberty. We do have a BBQ as we feel that is what the fallen would have wanted; going about with our lives and exercising our Freedom. It justifies their efforts.

    Best meal of the day was sausage and fried eggs on the Coleman camp stove. Usually I'm a Weber kettle kind of guy, but my kid and I kicked off the 2014 camping season last night and "camp sausage" and "camp eggs", as we call them, are a camping staple for us. As good as all the Memorial Day meals here sound, I wouldn't trade my breakfast for any of them. :)
