The things dads will do for their monkeys

    In a word, anything...

    Monkey asked me to paint her nails this morning. Both monkeys ask me to do that for them, not because I know how. But because I am more patient than Mrs. Hanzo.

    And the monkeys use me for their canvas. How rude! They would give me Sharpie tattoos. And this time, they each did a half a face each with face paint.

    That's why I won't quit my day job. Besides, I only do it a few times a year when my girls ask me to. Happy they are not that into that stuff either.

    LOL, THAT brings back memories. Not the face paint thing though, never did that. Have they painted YOUR nails yet? BTDT. All three of mine still have Daddy wrapped tight around that little finger, no matter how much older they get. Good on ya Bro.

    No worries,just make that part of the rules. Dad has to remove all girly stuff before the next work shift. Took me awhile before I let them have their way, but it was worth it. LOL thinking back that was a great Sat with my daughters.

    Different ways you can make it depending on your intent.

    If you want it to be fall apart tender, then I keep the chicken whole, rub the cavity with your favorite seasoning, and stuff it with garlic and rosemary. Then rub the outside. Wrap in foil, then wrap the foil with your favorite leaves (sans leaves, you can use wet paper towels). Then wrap with foil again.

    Slow cook in the grill. When it's done, the meat will be juicy and come apart when you touch it.

    The other way is huli huli, which means to turn. So it will be more of a rotisserie style. Or turn it on the grill. In this case, split the chicken and rub the inside and outside with your favorite seasoning. I like to make one side of my grill hot and the other side cooler. So seat the chicken on both sides on the hot side. Might huli it a few times. The move it to the "cool" side to smoke and finish slow cooking. Huli in the cool side periodically too.

    The first way, I cover the grill. The second way I usually don't because of the periodic turning. It will cook faster if you cover it while on the cool side.

    For both, I use kiawe (our local mesquite). You can eat faster with huli huli if you are hungry.

    Anyway, hope that helps. I don't have measures because I rarely measure anything. Just ask @Bear about my ponzu sauce "recipe."

    Let me know how it goes, if you try. I do the same as the first method with pork shoulder too. And both with chicken and pork, that method works in an imu (underground pit oven). Since where we camp, I can't dig too deep and I don't have access to the types of stones I would want, I do a modified imu. I dig a shallow hole...maybe a foot deep and about a foot and half diameter. Build a fire in the hole. When I have a nice bed of coals, I shovel them out and to the side. Put the wrapped bundles in the hole and cover with ash and coals. I keep a campfire going to the side so I can add coals, since I do not have hot rocks in the hole.

    At camp, I start the process after breakfast and before lunch. By dinner, whatever is in the ground is falling apart and juicy. Just remember, this method has higher heat than the hot rocks. The rocks will be hotter in the beginning, but the heat from the coals will be higher longer. You can moderate the temperature by either digging a deeper hole, putting less coals or a combination.

    Morning to dinner cooking makes great kalua pig or kalua chicken. Think pulled pork. Lunch to dinner makes great roast pork and roast chicken. You can cut it and it might not fall apart, but still tender.
