Went picking over the weekend. Picked ourselves one bushel each of Cortlands & Braeburns. Bags look half empty because applesauce already underway. We have one of those spinny things which peels, cores and slices the apple. Makes things go zippity-zip. Added minimal sugar, a goodley amount of cinnamon and several dashes of nutmeg. Sorry but I cook from the heart, not a book. Next; canning applesauce !
