Essential Baking "Bake at Home" Bread - Long Shelf Life

    I ran across this bread at Costco today and noticed the package said something about having a long shelf life, so I checked and the expiration date was January 10, 2018, so over four months without refrigeration. Has anybody tried this bread?

    I wonder whether there is sufficient viable active yeast to use part of it as a starter yeast for further sour dough bakery, incorporating stored 'from scratch' ingredients. If so, that would make it even more attractive as a long term storage option should commercial bakery product no longer be available during a grid down situation.

    I've seen where you can make sour dough starter from yeast that already in the air, but that sort of thing takes time and each area has it's own local version. I'm thinking this bread might fit into an intermediate stage while you are getting the rest of your ducks straightened out or something short a few weeks or perhaps a month. Then again, I didn't note the price so it might be too expensive to rotate in with other foodstuffs.

    This is a heat and serve loaf. It has a shelf life because it is sealed. I bet if you opened it, the shelf life goes down to about a week. I am wondering if I bake a loaf of bread and vacuum seal it lightly (leave some air) would it last for 4 months? Maybe?

    I don't know what the Costco price is but the company web site shows a case of 12 is $50 plus shipping.

    Creating your own sourdough starter appears to be fairly straightforward:

    It seems simpler to just have and rotate yeast in your storage but it's nice to know I can make a starter if I need to.

    Checked out these bread products via Amazon. Whoowee! Too spendy for this old pensioner. A lot cheaper to make my own.
