Anyone Making St Patrick's Day Dinner Saturday?

    March 17 is St Patrick's Day and I always look forward to boiled dinner. Corned beef is one of my favorites and I enjoy all the veggies. If you are cooking St Patrick's Day dinner, you may want to try making Irish Potatoes and cabbage, called Colcannon. It is a mash potato dish that has cabbage, leeks and is simple to make and very filling. There are many variations to the recipe but it seems really simple. I think you could actually make it with the leftover veggies if you do a traditional boiled dinner.

    Colcannon It is not necessary to add meat, you can leave that out if you choose.

    Mrs 3M is of Irish descent so it's mandatory here. Colcannon looks interesting and we'll take a look see. It's interesting that the standard Irish dinner typically uses Corned Beef, which the emigrating Irish learned about from the Jews in New York.

    I am Scottish but the Mrs is Irish...Lord help me. Bring up the dark beer and Irish food, I will eat like it is my last. You never know with a red head Irish woman!!

    I will probably break down and buy a corned beef brisket. Not my favorite, as I like corned beef Round much better. I think this year I'll do it on the Treager, boil some red potatoes on salty water and add the cabbage wedges somewhere toward the middle of the boil. We'll put on our green and await the Super Lotto results! :)

    You have made Colcannon so do you use bacon, ham or no meat?

    I was taught to use tasso if I have it. If I don't, I smoke a ham steak for an hour or so and chop it up.

    Oddly, I never thought of bacon.

    I had to look up what Tasso was. It is a Southern type ham. I have never seen that in a grocery store.

    You might have double smoked bacon where you are. That would be close.

    I will probably cook cabbage with tasso sausage and add red Irish potato's to the pot, Season with Slap Ya Mama

    Colcannon is made. I used the burnt goodness 2”x10” end of the bacon I smoked a couple of weeks ago.

    I did it a little different this time. I sautéed bacon, onions, and sweet peppers, and butter. Then sweated in the cabbage and built layers of that mixture with thin sliced potatoes and baked covered for an hour. The taters cooked to mush in the cabbage juices and dissolved in a good stir. Spiced with coriander, salt, and white pepper.

    Much more flavorful than the last times I made it.

    I’m cooking burgers at my property in Poulsbo. I have a green IBEW hat but that was just by chance. God bless the Irish though. [afro]

    I made all the food but didn't mix things together since no one was coming home for dinner. I figure I will mash things together tomorrow. The recipe called for leeks but I have green onions and sauteed those up. Maybe I will add some cilantro because I have some fresh in the fridge.
