Willow is definitely the traditional gold standard (specifically Black Willow), but for home-brew, a lot of guys are getting hotter velocities with Eastern Red Cedar or Paulownia these days. It seems the lighter, more porous woods char better for this purpose than some of the hardwoods we used to rely on.
