    A continuation of the cheese making series and the most technical. Would be best to try one of the other more cut and do ones before getting into this post. If storing dairy products, making cheese, is of interest to you, you need to read this or at least have it stored off line for use if things go bad. Had ancestors in Switzerland who came to the USA as cheese and butter makers, we forget that one of the purposes of making cheese was to store and make it possible to transport the milk given by the cows and other milk animals, from the summer pastures, to the homes in the valley for the winter's use.
