Brewing from Foraged Ingredients

    One caution for extracting juice from apples for cider. Blenders, disposals, etc will indeed pulverize the pulp making it easier to separate the juice without a high pressure press. But the down side is those will whip lots of air into the cider which significantly increases oxidation. It compromises flavor quite a bit. With good cider, the apples are sprayed with ascorbic acid (vitamin C) as they are chopped to reduce oxidation. And really good cider is pressed under a nitrogen blanket keeping oxygen away from the juice with the juice then flowing straight into sealed tanks purged of air (usually flushed with nitrogen again.)

    I expect my apple squeezings to be brown with some oxidation.

    So far Hard Cider is winning

    4 for Hard Cider
    1 for Mead
    2 for Cyser
    1 Hint for a Beer

    OK, it is Hard Cider and voting is closed....

    I've decided to purchase juice from Costco as it has no preservatives and I'm told ferments well.

    I will do a 5 gallon batch and ferment with Fermentis S05, a dry American ale Yeast. When fermentation is finished, I'll taste and back sweeten if necessary with apple juice concentrate after treating the cider with Potassium Metabisulfite.

    Juice forged from Costoco. I like it! Don't let the snakes at Costco get you ;)

    Foraging at Costco can be a good thing... :D

    But, on reconsidering; I am skipping the back sweetening and the addition of the chems to kill secondary fermentation. This is a basic Hard Cider as you would be able to make in the wild (with the exception of the foraged juice from Costco.. [bow]

    I'll do a Hard Cider or Cyser later this Fall with fresh pressed apple juice..... [reddevil]

    I will try another batch of mead soon. This time I will use proper brewer's yeast.

    Shopped ciders today and looks like I'm not going to beat $3.99/ Gal. Surely not going to drive into the valley to buy at Costco (my first choice), so I'll shop locally at Grocery Outlet or another Discount Store. Kinda like foraging.... :rolleyes:

    Worst case, during the season, you could build a rudimentary press and filter your crush through clean sheets. Then heat to 160 degrees for 15 minutes to (hopefully) kill off any wild yeasts or bacteria. Two large branches twisted into both ends of the sheet material could possibly press out enough juice to ferment. It would take team work and plenty of physical effort but would preserve the juice for a period of time if you could get it bottled.

    I'll go over the entire process once I can get everything together.....

    @tully_mars I'm volunteering you to help twist @Dunerunner into cider =). Opps I mean his apples into cider. Ugh well let me rephrase. Volunteering you to help make cider. I will sit and drink prior years cider and supervise =)

    Seriously this could be fun. I have some friends who have a large grape arbor as every year we go pick and stomp grapes and he makes wine. We drink anything left over from the prior year. A fun drunken party

    Going to get going on this this weekend.

    Bought a 5 gallon glass carboy at a shop in Brookings and that will be my fermenter.

    OK, I foraged some TreeTop Cider at Gross Out (Grocery Outlet). Bought two cans of concentrated apple juice to kick up the sugars. I didn't take a gravity, in the field, you wouldn't care.

    Then filled the carboy with the cider to near the neck of the jug, added the concentrate and the yeast...
