Why do we slit the throat and let it drain? To remove the blood? Most of the blood remains, unless it was slit while the heart still pumps. Most of the dietary laws were because of poor handling and cooking procedures, and parasites, not because there was something wrong with the meat itself. Just like squirrel has little worms until the first hard frost, if cooked poorly, you could get sick.
