Easy Breezy Key Lime Pie Cheesecake . Ingredients: 1 refrigerated pie crust . 8 oz pkg cream cheese, softened 14 oz can sweetened condensed milk 12 oz container frozen whipped topping, divided, 8 oz and 4 oz 3/4 cup key lime juice . lime slices, zest. fresh mint leaves for garnish. (optional) -------------------- Directions: 1. Bake the pie crust as per instructions on pkg. Let it cool. 2. Blend the next four items (only 8 oz of whipped topping), with a mixer, until thick but smooth. 3. Pour Lime filling into pie shell. Chill in frig for 6 hrs 4. before serving top with remaining 4 oz whipped topping, zest, and mint leaves. ENJOY
Key Lime Coconut bar cookies . Ingredients: 1.5 cups fine crushed coconut cookies 3 TBS Butter, melted 8 oz pkg cream cheese, softened 14 oz can of sweetened condensed milk optional, grated coconut . Directions: 1. Preheat oven to 350 degree F, Coat an 8" SQ baking dish with cooking spray (pam). 2. In a bowl, stir cookie crumbs and melted butter with a fork until well blended. 3. Press crumb mixture into bottom of prepared baking dish. 4. In a bowl with an electric mixer, beat cream cheese, condensed milk, lime juice and zest until smooth. spread over cookie crust. 5. Bake 35 minutes, cool for 30 minutes, chill in frig for 3 hours before cutting and serving . optional, Fresh from the oven, top with grated coconut, then cool and chill. ENJOY
I love Key Lime Pie. One of my favorites and FYI- Costco'sKey Lime pie is garbage. I will try the Key Lime cheesecake. That is an easy recipe. Nice tribute to CRC, she was a spunky lady with a kind heart.
Easy Key Lime Cake . Ingredients: 18.25 oz box Lemon Cake mix 4 serving size pkg instant lemon pudding and pie filling 4 eggs 1/2 cup Key Lime Juice 1/2 cup vegetable oil 1/2 cup water 1 tspn Lime Zest ----------------------- glaze: 1 tspn Lime Zest 1 TBS Key Lime Juice 1 cup confectioner's sugar . Directions: 1. Preheat oven to 350 degrees F, Coat a 10 inch Bundt pan with cooking spray (pam). 2. in a large bowl, with mixer, combine and blend on low 1st 7 items until smooth. pour into bundt pan. 3. bake cake 40-45 minutes - until tooth pick come out clean 4. let cool 15 minutes, then invert onto serving platter, allow to cool completely. 5. in medium bowl blend key lime juice and confectioner's sugar. drizzle over cake, sprinkle with zest ENJOY
