Discovered a couple of new treats today using pitted Medjool dates. First one is to insert a pecan half (or walnut half) in the date, wrap with 1/2 slice bacon, bake until bacon is crisp (can nuke bacon for ~1 minute to help crisp it up before wrapping date), then roll in melted chocolate, put in ice box to harden, eat (be careful, dates are prunes that are not dried yet! LOL). Unbelievable!!! Second is a bit more complicated. Take 3/4 C almond butter, 3 T cocoa powder, 1.5 t honey, 1 C unsweetened coconut (I used sweetened...worked fine), 1/8 t sea salt, a tsp or 2 water, mix and roll into balls and then stuff into the pitted date. Wrap with bacon, put in 400 degree oven and bake until bacon is done. Let cool, enjoy! I guess you could coat the second in melted chocolate, also. Bacon and chocolate! Who'd a thunk? LOL Kajun
Seacowboys, I actually was stone cold sober and straight and browsing through a paleo diet chocolate cookbook when I ran across the one about putting the choccy inside. I did a little Google-fu and ran across the other one. Darn it!! LOL ghrit, if these were put into some of those bacon bowls, I think they'd be declared illegal, immoral, fattening and bad for the children! BTW, I found out dates aren't prunes in disguise! Eat away. OK, within reason. These are seriously addictive, tho. Kajun
World Market has dark chocolate covered bacon. It's my kryptonite. Suspect this recipe will rank right up there with it.
