    commercial operation, they leave the roots and much of the tops in place. The vid is also a interesting look at getting free stoop labor to harvest.

    Garlic is a good source of some nutrients and essential metals (Magnesium for example) and adds a lot of flavor with a small amount of stored product.

    Onions are good to braid and hang as well. I've strung up chillies as well but they need a dry hot climate.
