Xiaoge was a cop but quit her job to go home and care for her parents when her father became ill. She's been uploading videos of her preparing food for a few years now. This one is of lard preserved pork. I remember reading about American settlers packing pork in fat to preserve it while traveling. This is basically the same thing but the first time I've actually seen it in action from start to finish. This one she shows curing hams to hang and age for 2 years. BBQ Bologna Slaw Burgers. We're going to try this over the weekend.
Ok I made these yesterday and they are awesome. Supposed to let them sit 4 days but I couldn't wait. Going to make some whole ones for hot dogs. I also made these last week and they are my new fav pickled eggs. You can fast forward to 10:07 mark to get the recipe.
This lady adds salt before she cooks down the tomatoes and lets them drain which is interesting. This is how my grandmother did tomato sauce
