Oh man, was delicious - tender & lean with about 2 minutes of smoke. Down on high charcoal, 5 minutes, flip, 5 minutes, remove. rest for 5. Could have cut it with a butter knife. This meat came from my Assistant who harvested in Oregon last year - just realized that he gave me elk hamburger, Venison backstrap and venison burger as well.
