    Elk Loin Chops

    • 4 Elk loin chops
    • 1/3 cup olive oil
    • 3 tbsp soy sauce
    • 2 tbsp ketchup
    • 2 cloves garlic, minced
    • 1 tbsp vinegar
    • 1/4 tsp black pepper

Mix all ingredients into a marinade, add the elk, marinate for 4 hours in the refrigerator. Grill over medium coals on barbecue.

They are currently marinating and will hit the grill this afternoon. I'll let you know how they turn out.

Oh man, was delicious - tender & lean with about 2 minutes of smoke. Down on high charcoal, 5 minutes, flip, 5 minutes, remove. rest for 5.
Could have cut it with a butter knife.
This meat came from my Assistant who harvested in Oregon last year - just realized that he gave me elk hamburger, Venison backstrap and venison burger as well.

Back strap is best eaten fresh at camp.

So, this past week has seen the elk, Traeger smoked salmon and a Traeger smoked turkey.
Amazingly, I'm down 5 lbs over the Holidays ;)

Amazing what cutting out the beer does for the body.
