I am about to embark on the RV off grid living. Figuring a few thing out. I am trying to get the idea of whats first on the list, second, third... and so on.

Welcome to the monkey. RV livin' adds a lot complexity to the situation and can add lots of fun to it as well.
Good luck and happy trails to you. You will love it or hate it there is no middle ground. Mechanical ability is a big plus. This is a great site to help figure our off grid issues. Water, battery and waste storage are the big issues when stationary. Refrigeration is another. On the road vehicle maintained well is a must. A good thinking mind goes a long ways.
