    I agree whole heartedly that temperature is one of the main keys, and that 140 - 145 degrees should be maximum to ensure the meat is not dried out. Coating the entire outside with some sort of vegie oil (i prefer evoo) as well as putting bacon on top of a deer roast helps to keep the juices in thus aiding in ensuring a juicy tasty excellent cooked final product.
