Wifee loves kabocha. We even add it to the dogs’ meals along with brown rice. I first made kabocha coconut curry for her and she really liked it, so I make it in various ways. I love kabocha! It grows really well here too. I got some seeds from Orchidland a few springs ago. Have you tried delicata squash before? I love roasting or airfrying it then adding cinnamon, seasalt, and coconut oil. I used to also add some maple syrup, but now that I'm doing the keto diet I can't.
