......deer were hanging, we have a meat safe there and to get the best out of any game you should give it at least a couple of days before refrigerating it if the weather is not at 10,000 degrees. In winter there I will leave them hang for five days before breaking them down, bagging and freezing them. We did eat a bunch of venison this trip, but it was from our last trip in September... Pigs stay where they fall. There is a current DPI warning for encephalitis in hogs (more so QLD but also NSW) and Q fever is most certainly here, among the other rubbish they carry. Thanks all, work has been a real bitch the last few months so when my mate suggested we take off for a few days I grabbed it with both hands...!!
