My Bread Journey - Sourdough and Others

    Yes you can bake any kind of bread in any kind of pan.

    Sour dough was generally cooked without a pan with sides thus the round configuration. Today it's called artisan bread when in this shape. Go figure.

    Yup... bacon to grease the dutch ovens... pulled out the dutch ovens... and they can use some seasoning and use... on is brand new that I got years ago and never used....

    Thanks for the reminder @Mindgrinder bacon makes everything better!

    Yup... @ghrit ... in my extensive (who am I kidding... just did some quick searching)... I saw a poor man's dutch oven... that was simply two loaf pans... one on the bottom and the other inverted over it to hold the heat and steam... so I may give that a try too...

    Well consider this your "kick in the butt"... get that recipe from someone quick and go to it... even if you only do it once... I reckon it's gonna be worth it...

    Great memories... Thanks for sharing.... brought back memories of all the great stuff my Grandmothers, Aunties and Mom made and continue to make... always forget to get the recipe at least and learn... they are just awesome at teaching and often are flattered that anyone would even ask...

    So what are you waiting for... go for it!

    Aloha all you Bread Loving Monkeys! BLM....

    Well here it is a bit over 12 hours and the dough seems to have risen nicely... YES!!!!!!! Snoopy Happy Dance!!!!!!!

    Don't have a bread board so decided to just use the smooth cook top and four the heck out of it... and use my rice scoop....

    Lots of flour...

    Take them out of the bags and the smell is wonderful... and they have more than doubled.... dough is all nice and bubbly....

    But man!... this stuff is wet loose and sticky!!!!! Yuck...

    Probably did something wrong but "Damn the torpedoes... Full Steam Ahead!!!!" or something like that ;)

    Finally got them quickly into nice little round flat blobs...

    Back into their bowls and covered for an additional 2 hours....

    Gotta heat the dutch ovens about 1/2 hour before...

    One in the oven will be my old Wagner... (yeah I know it needs some TLC)

    One with the coals will be my Lodge 12... bought years ago for this and never used....

    Stay tuned... In a few hours.... We'll see how this first attempt goes....

    Sourdough Bread is in the ovens....

    Nice rise... learned something on the net... used a cotton bandana covered in flour to get it into the preheated dutch ovens... sure made things easier... next time I'll let it second rise in them...

    LOL... good use of a bandana ;)

    Smells really nice in the house ;) and outside in the forge area...

    Went with 400 degrees instead of 500 ... since the recipe called for that....

    We'll see in a little bit.... Might be good... or a Fail... either way... I'm excited ;)

    30 minutes at 400 in the oven... take the cover off and another 30... check every 15...

    Take the coals off the bottom and a couple off the top for the dutch oven outside....

    Looks ok... not spectacular but ok... smells wonderful!

    @Bear I am loving this sourdough journey. Great information and details. The dough really rose well. Has me thinking I should try this also because I have issues with my second rise using regular yeast. BTW- you said it smelt good but how did it taste?

    That is so interesting.

    OT- did anyone notice on the cover of the magazine- Discovering Sasquatch. Finally???

    Yup... a bit wet indeed... but this is my first ever bread so I don't really know what it's supposed to be like.... oh well...

    I have to laugh at myself... so much of this is trial and error... already have learned a bunch of things along the way...

    Report coming up on the first bread out of the oven....

    SUCCESS!!!!!! Crispy Crust... chewy center... lots of holes for butter!

    And the taste????.... wait for it... AWESOME!

    Sort of sublime at first... almost like no sourdough taste at all... then WHAM!... it hits you with a heavenly sourdough flavor...

    Cut two pieces.... Grandma loved it... still warm and crispy crust out of the oven...

    Ultimate taste test.... my little Princess who is at her mother's place... drove the rest of the loaf over while it was still warm...

    A bit later I get a text.... It Tastes Good!!!!!!!!!!

    OK... mission accomplished on this first go round... Got the oven baking pretty down pat... could be better... maybe use my smaller dutch oven the next time...

    Coal version... dang... not enough coals... still in there and not quite done... next time... go with 500 degrees...

    Stay tuned to see how the coal dutch oven version comes out...

    For now... I call this "Good"... Iron Monkey now just added his SourDough Bread Patch to his old stinky furry hide... LOL....
